Awesome Baked Sea Scallops

Good flavor - I also add Old Bay and Smoked Paprika. Next time I'd back for 18-20 minutes instead of 14 as they were barely cooked. Of course this depends on the size of the scallops.

Banana Bran Muffins

Pretty nice. For the record, I threw in a couple handfuls of raisins, tablespoon of water and TBSP of chia seeds and skipped the nuts. FYI chia seeds are awesome, try 'em, you'll like 'em.

Greek Style Potatoes

Eggnog French Toast

I used thickish sliced bread and ran out of egg/eggnog mixture after only 5 slices. I couldn't taste the nog and although I grilled the bread for ages, the middle was still soggier than I'd hoped for. I guess I'll blame the cook for too aggressive of a dip and too thick of bread. Wonder if baking in oven would have yielded a better result?

Zucchini Yogurt Multigrain Muffins

Super duper moist. My picky toddler ate 3 today. My husband thought they needed more flavor, but what does he know. Kid approved! I also cut the sugar & honey by half, FYI, as I used sweetened yogurt.

Ginger Scallops

Gah, my sauce curdled so I blended it - but then it separated. I did use half and half instead of full cream so maybe that's what happened. However, it was still very tasty.

Double Layer Pumpkin Cheesecake

My first attempt at a cheesecake and wow. Since I had a 1/2 extra block of cream cheese in my fridge, I added that too (for a total of 2.5 blocks). I cooked it for 43 minutes and it came out perfectly (no cracking). Delicious result even without whipped topping.

Banana Banana Bread

Pleasant basic recipe. I substituted 1/8 cup ground flax for flour and added 1/2 cup chocolate chips and a heavy splash of dark rum. Used three large bananas (previously frozen). Baked for 55 minutes.

Hearty Hot or Cold Roasted Tomato Soup

Kitchen Sink Cookies

Makes a hearty, sweet cookie. Our dough made around 60 2" treats. We added scor bits and used butterscotch chipits. Also substituted toasted almond slices for pecans.

Roasted Red Pepper Lasagna

For all the work that went into this one, I was expecting "more". Flavour is mild and mine seemed to be on the runny side (even after I let it rest 15 minutes). I used whole wheat noodles and even extra fresh parmesan.

Smoky Four Cheese Macaroni Bake

We were impressed. We used long macaroni noodles (made serving a bit more tricky), a little less cream cheese (ran out), and skipped both the swiss and parm on top (seemed cheesy enough). The onions and liquid smoke were great additions.

Seared Salmon with Balsamic Sauce

An ok recipe - probably higher if I was a more patient cook. Be sure not to turn the fish more than once or it will fall apart. I was a little surprised at how much oil, etc. was left in the pan after I removed the cooked fish (1/2 cup?). I drained some of it before adding in the sauce. I also added a touch of cornstarch to thicken.
