"Pantry Raid" Chicken Enchilada Casserole

Fantastic casserole! There was nothing left, my picky family of four went back for two and three servings! My modifications: I used an 11x7 pan, reduced chili powder to 1 TBL and sauteed some chopped onion and garlic and added it to the sauce mixture. I roasted two chicken breasts and shredded them, mixed them in with the other ingredients. So good, I'll make this many more times! Thanks for a great recipe.

Simple Tiramisu

I loved this! My adjustments: I whipped two cups of cream and added a little powdered sugar instead of Cool Whip and added a few tablespoons of chocolate syrup to the coffee/maple syrup mix. I also put the lady fingers on the bottom of the pan, not the sides; I layered some of the cream cheese mixture over the lady finger base (sprinkled some cocoa powder on), put the remaining lady fingers on that, then put the rest of the cream cheese mixture on top. Sprinkled lots of cocoa powder on top. It was so good, I'd make it again.

Easter Meat Pie

B and L's Strawberry Smoothie

Fabulous! I used 10 strawberries, a banana, 6 oz. Greek vanilla yogurt, 1 TSP vanilla, 1 TBL sugar, 6 cubes and no milk (I don't like a thin smoothie!). Delicious!

Easy Quiche

Pretty good. I added the sauteed onion and garlic, a little pepper, decreased the milk to 1 2/3 cups. Still needs something, can't quite figure out what though. My family was not crazy about this dish so I won't be making it again.

Garlic Butter

Fabulous! I followed the recipe exactly and this was a hit. A local restaurant serves a butter mixture like this with hot rolls; however, they melt it and drizzle it on a plate then put the rolls right in the melted butter. I might try doing the same with with recipe. Yummy!

Meat-Lover's Slow Cooker Spaghetti Sauce

Fabulous sauce! I omitted the ground beef, used 1 pound sweet Italian sausage, used pureed tomatoes instead of stewed. I simmered it on the stove for 4 hours. My family loved it; I'm making more now to put in the freezer!

Refreshing Limoncello Cake

A very moist cake; I think it would benefit from more lemon juice in the batter. The Limoncello in the glaze was just too overpowering.

Bean with Bacon

Very good; my husband liked this soup. I pureed the tomatoes with about half the bean/broth mixture. I used six bacon slices, I will increase it next time.

Chocolate Banana Bread Pudding

Pretty good; I followed the advice of another review and layered the mixture, adding the chips on top of the layers. My family was not wild about this warm. I'll cool it in the fridge and see if it's better when cold.

Italian Meatball Sandwich Casserole

Really good with my changes: 1) I subbed ricotta for mayo, 2) added dried minced onions and a little more Italian seasoning to the cream cheese/ricotta mixture, 3) toasted and cut the bread in half then spread the cheese mixture on it, 4) omitted the water and added a little Italian seasoning to the sauce, 5) heated some frozen meatballs and sliced them before laying them on top of the bread and cheeses, 6) sprinkled more mozzarella on the meatballs and covered them with the sauce. Family liked it a lot!

Marshmallow Treats

So good! I omitted the mustard from the sauce and my family loved it. I also added worcestershire to the meat - tasty. Finally, I divided the meat into two loaves; cooked in one hour.

Very good. Instead of sausage, I added bacon and sauteed spinach. I didn't have fresh onion so I used minced dried onion. I'd make this again, maybe add some hash browns.

Flourless Peanut Butter Cookies

These were good. I added 1 TSP vanilla and some mini chocolate chips to half the batch. The chocolate was a really tasty addition, made it taste like a peanut butter cup.

Very good. Definitely add more butter to ensure a solid crumb/peanut butter base. Chilling the base before pouring on the chocolate was an excellent suggestion, too.

Buttercream Icing

I added two more TBS butter, deducted two TBS shortening. I want a firmer frosting so I added only 1 TSP milk. Very good frosting!
