Lemon Pudding Cake II
The term 'cake' in the title threw me. It wasn't a cake at all. I didn't care for the egg white sort of texture of the 'cake' (ie. top layer). It certainly was lemony and that saved the day, but I won't make this again.

Streusel-Topped Muffins
These were ok, but I have to agree with others who said they were bland and tasted like dough. The streusel topping made them edible, but otherwise, not very good. I'm convinced many recipes on All Recipes are typed incorrectly. This seemed to be missing something. The topping needed flour to make it more crumbly. I intended to add vanilla as others have suggested, but forgot. I think that would have helped.

The Best Thai Coconut Soup
This was absolutely fantastic. I think it was better than what I've had in Thai restaurants. I was unable to find lemon grass, so I substituted a Thai paste (from the produce section) which included lemon grass, ginger, cilantro and garlic. I also used button mushrooms instead of the shiitake. And, I didn't want to pay the price of a fresh lime, so I used a fresh lemon. Wow! I will make this again and again! I'm not sure how Allrecipes arrived at the time involved in this recipe. It sure didn't take an hour to make this great soup.
