Turkey Tetrazzini II
Have made this dish several times and my family enjoys it. I've used ground turkey but tonight will use leftover turkey and turkey broth. I can't begin to see why it would take one hour to bake. Everything is already hot. I put a crumb topping on it and just do it until the crumb topping is golden brown. I have also added celery and/or mushrooms(if I have it). I don't put in near as much parmesan as it calls for but just 'eyeball' it. As written, it is a bit blah but needs seasoning to taste.

Easy Apple Cinnamon Muffins
I also failed to read the reviews prior to diving right into this recipe. I often do read the reviews, but not this time. My experience making muffins told me that this was not six muffins, but I stuffed the batter into a six muffin pan. I didn't see the direction of filling to the rim, but to get all the batter in, they certainly were full. They were delicious but did not come out of the pan in one piece. I may have been rushing though and trying to get them out before they had cooled. Sure, there will be leftover topping, but just pop any leftover topping into a sandwich bag and into the freezer for a crumble or crisp. And, I'm not sure why one would peel the apple. They are really nice with the peel left on. All in all, a nice muffin but lesson learned--trust your gut!

Red Enchilada Sauce
I've been using this recipe for about four years as I live where Mexican ingredients are very expensive (a store bought sauce like this would be about five dollars for one small can), so I make things from scratch. It is excellent and so easy to make. Variations can be made according to taste. I don't think it tastes like Italian sauce at all--as one reviewer noted.
