Southwestern Quinoa Salad
Quinoa is actually a seed, when the tail is sprouted instead of cooked out, it can be almost a completely raw salad. But cooked is great too, being that it is a seed and not a grain, most people have no allergic reaction to it and it's gluten free!

Pan Seared Red Snapper
I did like others suggested and used the remaining juice as a sauce, once I rendered it down. I added chipolte to just about everything and it was outstanding. Will make again! I made it with black rice, which is outstanding also, I squeezed an orange and added along with more chipolte. Threw in some veggies and it was tip top!

Corn and Black Bean Salad
Excellent salad. I use it frequently with BarBQ meats, or lovely with just some corn bread, or maybe a small bowl of soup, this is awesome! But I will have to admit, I use lime juice in place of the balsamic vinegar and I like it so much better. But the rest is the best!
