Strawberry Avocado Salad

This is my new favorite salad. Made it last night for some guests and everyone loved it. Based on some of the reviews I cut the sugar in half, and to be honest, I think it would have been just as good without the sugar at all. I also used cashews instead of pecans, since that's what I had on hand. The honey gives it plenty of sweetness. I will be making this again and again!

This was a huge hit for a dinner party. My only suggestion would be to turn the meat half way through the second baking time- as mine got a little too cooked/dry where it was not covered in sauce. My husband said, "PLEASE file this away in our favorites."

Poblano Corn Chowder

I followed the recipe except for the optional lobster base. It was a little sweeter than I had expected. I think next time I'll use chicken stock, more peppers, be sure to add the lobster base and see how that works out. A good recipe to start with though.

Tortellini Chowder

I would have given this five stars- but I didn't like the combo of potatoes and tortellini. I would double the amount of one or the other. Either would be good- but the two don't go so great together in my mind. Besides that though this recipe has wonderful taste!

Great with a few adjustments. I added carrots, green onion and about 1/4 tsp. each of dill and cellary salt. Next time may add some chopped tomatoes!

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

I used lemon juice since I didn't have a lime on hand. Also used sugared almonds as other reviewer suggested. My husband loved it- I thought the dressing was missing just a little (maybe the lime).

Green Chile Stew with Pork

My husband and I LOVE this soup! It's good without fresh cilantro too. We've experimented with different prepared green salsas and now have 2 favorites to use with this recipe. I've also substituted black and/or kidney beans to change things up. It always turns out great.

Banana Pancake Muffins

These have a smooth texture and are very yummy! Great with butter and jam. If you want to eat by themselves I would add a little extra banana, wheat flour, and maybe some cinnamon like another reviewer did.
