Middle Eastern Rice with Black Beans and Chickpeas

This is delicious! I'm eating it right now and it's so good! I used instant brown rice as that's what I had on hand. I threw everything in the pot (I skipped the turkey) and simmered it for about 15 minutes. I then covered it and let it simmer, stirring occasionally, until it was as thick as I wanted it. I'm eating it with a little sour cream on top. Fantastic!

Zesty French Dressing

Love this dressing! I add onion powder instead of fresh onion. I also add extra ketchup until it's the redness I like. I haven't bought French dressing since I started making this. Thanks for sharing the recipe!

Green Bean Casserole I

Awesome! We always add extra French fried onions. I usually bake this in the oven, but did it in the crock pot on Thanksgiving. It worked great! It was a bit soupy once it got hot so we just tipped the lid on the pot for a couple of hours. Next time we use the crock pot, we would add less milk. Since this method of cooking wouldn't result in crispy onions on top, we simply toasted some French fried onions in the oven for a few minutes and served them on the side. Everyone loved it!

Special Lobster Bisque

This was pretty good, but we felt like something was missing without tomato paste. Also - make sure you use good lobster. The kind we had was not the best and it really detracted from the bisque. Not taking that into consideration, I felt this was a 4/5. With a bit more tomato-y base, I think it could easily be a 5.

Chicken Enchiladas II

We thought these were surprisingly good. I made half of the enchiladas with canned white beans and the other half with canned chicken. Since I used beans, I subbed cream of chicken for the cream of mushroom soup in order to get more chicken flavor. They were pretty good on their own, but the addition of taco sauce and sour cream made them more flavorful.

Spicy Beef Vegetable Stew

Loved it! I cut the pepper back to 1/4 tsp as another reviewer suggested. I also used 2 carrots, 2 potatoes, and about 2/3 cup of frozen green beans instead of the bag of frozen mixed veggies. Very good and healthy!

Barbie's Tuna Salad

I love, love, love this tuna salad. It's so easy to make, and you really don't even have to measure if you don't want to. I just throw in a few shakes of this and a few dashes of that, and it still turns out great. HINT: I rarely have relish on hand, so I just chop up some dill pickles and add a little sugar. This is great on crackers!

Lighter Fettuccini Alfredo

This is a fantastic recipe. I used light cream cheese instead of Neufchatel and served the sauce over penne pasta, sauteed chicken, and broccoli. It was much lighter than regular alfredo sauce without all the grease. A definite keeper.

Classic Bran Muffins

Delicious! I didn't have wheat bran so I used oat bran. I replaced the all-purpose flour with whole wheat flour and used craisins instead of raisins. These were fantastic!

Carrot Cake III

This was good but not as spectacular as I was expecting. It was slightly eggy-tasting and not as spiced as I thought it would be. The frosting, however, was heavenly. I cut down the powdered sugar by about 1/2 cup and it was great!

Lime Chicken Soft Tacos

I'm giving this 4 stars as written, but I did my own spin on it that I thought was a definite keeper. I left out the oregano and green onions and added onion powder. The chicken was delicious, but I like my taco filling a little moister so I added some water with chicken bouillon and cornstarch. I brought it up to a boil and then simmered it until it was as thick as I like it. End result: perfect.

Walnut-Date Quick Bread

I thought this bread was excellent. I was looking for a nice, dense bread I could eat for breakfast with coffee, and this is it. No butter or other spread is needed; it's perfect as-is. One thing to note: I used nonstick cooking spray instead of greasing the pan, and I would NOT recommend doing this as it makes the outside crust taste a little burnt.

Banana Crumb Muffins

These were super! I messed up and accidentally mixed in the brown sugar with my banana mixture, so I just skipped the crumb topping and baked them as-is. They were great! I think I'd make them like that again.

Baked French Fries I

The flavor of these fries was great. For personal preference I cut them into sticks and followed other reviewers' advice, baking them at 425. The only reason I'm not giving them a 5 is because they were quite oily so some of the fries were kind of soggy. Next time I'd cut back on the oil.

Taco Seasoning I

Delicious! The only change I made was to drop the cumin down to 1 tsp. The tacos I made with this were probably the best ones I've ever had - the perfect amount of heat and flavor, without all of that orange grease you get from store-bought packets. The flavor was really on a level of its own. Great recipe!
