Spaghetti Sauce II

This was pretty good. It was a little sweet/acidic for me - I think next time I'll cut the tomato paste in half.

We love this recipe. I leave the salt out and cut the sugar in half. We fill with cucumber, carrot or avocado, and cream cheese. Delicious!

These were so good! I skipped the chill time and just baked right away. The cookies were the perfect thickness and chewiness.

This was so good! I made a half batch, which I baked in an ungreased 2-quart glass loaf pan for 30 minutes. It was perfect and delicious!

This soup is amazing! I used leftover (plain) pulled pork instead of chicken, and it was awesome!

The Best Bean and Ham Soup

Reviewed: Sep. 11, 2011
Great soup! I used a pressure cooker to make this because I only had a couple of hours before suppertime. First, I pressure cooked the soaked beans for 4 minutes (I did it in 2 batches due to the recommended capacity of my pressure cooker when cooking beans). Next, I added the rest of the ingredients (except the chicken broth and salt) and pressure cooked again - this took 20-25 minutes under pressure, but you could vary it depending on how soft you like your beans and veggies. After it was done, I added an extra cup of vegetable stock to dilute it down a little bit. I only used half the onion and used spicy hot low sodium V8 - it made it nice and zippy! I never did add the chicken broth or the salt. Next time I might try omitting the diced tomatoes as well - they were very good, but I think it might help keep the focus on the beans and ham if they were left out. All in all, awesome soup and a versatile recipe! Thanks for sharing.

Quick Lemon Crisps

I tried these as written, and thought they were a little less lemony than I was expecting. Once I glazed them they were fantastic!

Cocktail Meatballs

Reviewed: Feb. 26, 2011
These meatballs were great. I used a different sauce (BBQ sauce from Williams Sonoma), but the meatballs themselves were fantastic. Mine were quite small so they were done in 15 minutes. I also only simmered the meatballs in BBQ sauce for about 20 minutes and they were still very flavorful.

Mom's Meat Loaf

Reviewed: Feb. 26, 2011
Delicious! I doubled recipe and added 1 small stalk of celery (minced), which I sauteed with the onions in 1 tsp of olive oil. I also cut the milk in half, used Italian breadcrumbs instead of crackers, and omitted the brown sugar. I shaped it into one large loaf and baked it at 350 for 1 hour. It was fantastic!

Mushroom and Swiss Chicken

Reviewed: Feb. 25, 2011
This was fantastic! I cut the recipe in half, but doubled the garlic and added 1/2 tsp onion powder (I omitted the green onions). I marinated the chicken in the oil, vinegar, garlic, Cajun seasoning, and onion powder for about 20 minutes before baking. I also used a small can of mushrooms instead of fresh and used shredded Swiss. It was SO good with excellent flavor! Next time I will cut down on the baking time, but other than that, this recipe is perfect!

Pressure Cooker Beef Stew

Reviewed: Feb. 20, 2011
Yum! I had venison in my freezer and didn't know what to do with it, so I decided to make this. I used 4 potatoes instead of 8, added an extra teaspoon of beef bouillon, added 3 large stalks of celery, and omitted the salt. I also added 2 tsp of Worcestershire sauce as another reviewer suggested. Instead of cooking the potatoes separately, I just pressure cooked the onions, meat, and carrots for 10 minutes; I then added the potatoes and celery and pressure cooked it for 10 more minutes. It turned out really nicely! Thanks for the recipe!

Middle Eastern Rice with Black Beans and Chickpeas

Reviewed: Dec. 21, 2010
This is delicious! I'm eating it right now and it's so good! I used instant brown rice as that's what I had on hand. I threw everything in the pot (I skipped the turkey) and simmered it for about 15 minutes. I then covered it and let it simmer, stirring occasionally, until it was as thick as I wanted it. I'm eating it with a little sour cream on top. Fantastic!

Zesty French Dressing

Love this dressing! I add onion powder instead of fresh onion. I also add extra ketchup until it's the redness I like. I haven't bought French dressing since I started making this. Thanks for sharing the recipe!

Green Bean Casserole I

Reviewed: Dec. 5, 2010
Awesome! We always add extra French fried onions. I usually bake this in the oven, but did it in the crock pot on Thanksgiving. It worked great! It was a bit soupy once it got hot so we just tipped the lid on the pot for a couple of hours. Next time we use the crock pot, we would add less milk. Since this method of cooking wouldn't result in crispy onions on top, we simply toasted some French fried onions in the oven for a few minutes and served them on the side. Everyone loved it!

Special Lobster Bisque

Reviewed: Dec. 5, 2010
This was pretty good, but we felt like something was missing without tomato paste. Also - make sure you use good lobster. The kind we had was not the best and it really detracted from the bisque. Not taking that into consideration, I felt this was a 4/5. With a bit more tomato-y base, I think it could easily be a 5.

Chicken Enchiladas II

Reviewed: Dec. 5, 2010
We thought these were surprisingly good. I made half of the enchiladas with canned white beans and the other half with canned chicken. Since I used beans, I subbed cream of chicken for the cream of mushroom soup in order to get more chicken flavor. They were pretty good on their own, but the addition of taco sauce and sour cream made them more flavorful.
