Christmas Casserole Cookies I
I needed to use up some dates that I bought for a different recipe and didn't make. And gluten free was a bonus. These were perfect. I did stir a couple times while baking, but I don't think I needed to. Just at the end would work fine. I followed another reviewers suggestion and left it overnight before working with it. And thank you to the reviewer who formed the mixture into logs using plastic or paper and then cut off pieces to form into balls and roll in the sugar. That made it go super fast and really contained the stickiness. The first person to try them asked for the recipe.

Eric's Best New York Style Cheesecake
Wow! I haven't made a cheesecake in decades. But I needed a low-carb dessert for a friends birthday. Being crustless this started off good. I substituted splenda for 1 1/2 cups of the sugar, using regular sugar for 1/4 cup. I also used half neufchatel and half regular cream cheese and light sour cream. I didn't add the amaretto as some people don't like almond, but added another tsp of vanilla. OMG it was so creamy it was fantastic. I also used these other tips from previous reviews. Instead of the water bath I put a glass baking dish with warm water directly under the springform pan. It did not crack. I still wrapped it in foil to keep it from dripping. And I lined the bottom and sides with parchment. The side parchment probably kept it from going over the sides. It makes a LARGE cheesecake. I will definitely be making this again. It's also a great gluten free recipe for my mother-in-law.

Banana Nut and Ginger Bread
I had a bottle of really dark beer I needed to use - one sip and I knew I wasn't going to drink it. This recipe was a great find!! I always have a few bananas in the freezer and I have all the spices. I didn't have dates or raisins so I just added walnuts. I also didn't frost it. I still loved it!! I plan to make this again - I'll take it camping and have it in the morning with butter and hot tea.
