Dijon Chicken with Bacon

This was very easy to make, and was pretty good. I used Hormel pre-cooked bacon that just needed to be microwaved, and it was surprisingly crispy but not burned. I spooned some of the sauce over the chicken, and would not recommend this because the teriyaki sauce was a little overpowering.

Chicken Focaccia Sandwiches with Chutney and Caramelized Onions

Didn't use the chutney... didn't need it. I used chicken strips so I didn't have to flatten the chicken. I warmed the bread in the oven for 15 minutes, and the sandwiches were great. Make sure you use all the mayo/mustard sauce or it can be a little dry.

Pork Chops with Peach Picante Sauce

I loved this recipe. It was so easy to make, and the sauce was wonderful. Next time I will pour out the grease from the pork chops before putting the sauce in to heat. My husband thought it was a little too greasy. I will definately make this again!

Vegetable and Cheese Chowder

This has a really good taste. I was a little concerned about the celery seed being too overpowering, but my husband loved it. I probably would only use 1 1/2 tsp next time. But overall, a great dish. I served with mini-bread bowls as suggested in the Cooknik newsletter, and they were great!

Salisbury Steak Supreme

I was a little leary of this when I saw the recipe... salisbury steak made me think of something I got in the lunchroom in gradeschool. But this recipe was so easy to make, and tasted great. My husband loved the sauce. I will definately make it again!

Baked Halibut Steaks

I could not find halibut and used tilapia instead. This was pretty easy and tasted good, although it was a little bland. I will use more feta if I ever make this again.

Salmon Cakes with Orange Couscous

This was not good at all. It was fairly time consuming to prepare(although I thought it would be easy). The cakes were dry and wouldn't stay together - I had to add a lot more than just 3 TBL of oil because it kept drying up in the pan. The cumin was way too overpowering. The only redeeming thing was the aioli sauce that was listed on the Cooknik newsletter as dipping sauce. I will definately not make these again.

Chicken and Broccoli Pasta

This was really good, but was a little time consuming to cook the chicken and then cut it up into chunks. I think to save time I will buy chicken cutlets next time, or try to find chicken breast that is already cooked. The flavor was really good, and it's pretty low fat.

Shrimp and Sausage Boil

Spicy and easy to make. My husband thought this tasted like something we would get at a restaurant. I left the water in after cooking and served with garlic toast. The soup mixture was great for dipping! Great recipe!

Good recipe... I liked the spicy sausage. To save time, I might cook the sausage ahead of time. I used bow tie pasta, and it made a huge bowl - enough for lunch leftovers.

Zippy Egg Casserole

This was easy to make, and convenient to make the night before and then just pop it in the oven the next morning. I made this for New Year's morning, and my husband RAVED about it! I wasn't sure if the dry mustard would be overpowering, but I couldn't even taste it. It's rich, but I will definately make this again.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This was great and my husband loved it!!! I will definately make this again. I used 4 cans of tuna in water, added a tbl of oil, doubled the mayo and mustard, and left out the curry. I used the regular amount of remaining ingrediants. I will try the curry next time.

Pumpkin Crescent Rolls

I took this to a Thanksgiving get together and had several people ask for the recipe. They are great once you get the assembly down. I followed the review that said to use a heaping teaspoon of the filling and then actually spread it over the crescent roll. Then roll very loosely. Once the filling cooks, it will harden a little, and won't spill out the sides. This is a great, easy recipe!
