Simple But Awesome Lemon Pepper Pork Chops

I was a little nervous when I saw the great range of reviews for this recipe. My husband encouraged me anyway, because he loves lemon pepper. This recipe was awesome. The meat was so tender. I added extra salt and pepper to give it a kick as well as dried basil. I also eyeballed the amount of olive oil and butter needed, cutting it drastically. There was still alot of juice, but every time I've cooked with foil packets you get that anyway. My husband said its a keeper!

Very easy! Very tasty. I will make this often. I was out of sesame seeds so I put kosher salt, pepper, and rosemary on them. Yummy!

Southwestern Bean Soup

It was pretty good. I used real garlic instead of the powder. I thought it was a tad bland even with using two cloves of garlic. I added some cumin and chili powder and that really helped. I think it would be really, really good with some fresh chopped cilantro on top. Thanks for the easy recipe.

This was okay. I did use fresh cherries because that's what I had. I feel like it needed something more. Maybe shallots chopped up into the pre-made dressing.

Shredded Beef Enchiladas

Great recipe. Did cook the roast in a crockpot all day, but that was really the only change. Made a huge batch which was a great surprise. It was a hit with DH too. I might try them with chicken next time. Definitely a keeper.

Orange Caper Chicken

This is one of our weeknight staples, we make it all the time. Tonight we had it with steamed asparagus. Yum!!! Do be sure to add salt to the flour mixture. I've recently discovered that I'm allergic to gluten, so I made it with rice flour and it was still great.

Stuffed Acorn Squash Supreme

My husband is always dubious of squash dishes, but he ate this one up!!! Like many reviewers I baked it. I might try it without the rice for a lower carb version.

BBQ Chuck Roast

This was the best roast we'd ever made. We too put it right on the grill and turned it halfway through. The only changes I made were to use gluten free beer and teriyaki for my allergies. We will definitely be making this again.

Grandma's Green Bean Casserole

I love this dish....its replaced the canned cream of mushroom version at our house for Thanksgiving. I am gf and so I replace the flour with brown rice flour or a gf blend and its very successful, I skip the crackers on top and its not missing. You could use gf crackers...I'm allergic to the flax seeds in the best gf crackers. I hope that help other people who are gluten free.

West Texas-Style Buffalo Chili

This is our goto chili recipe, I've been making it for years, but have never reviewed it. I've made it both with buffalo and ground beef instead. I too use canned beans most often (I can never remember to soak the beans the night before). The only reason I'm giving this four stars is that without four or so garlic cloves and some cumin, it is definitely missing some layers of flavor. BTW I have sauteed the ground beef and put everything in the crock pot with great results.
