Gazpacho I

Did not add any water. Drained the seed pulp from the tomatoes through a fine sieve and used that liquid instead. The ingredient list has garlic but only for the croutons. Liking garlic we added three cloves minced to the gazparcho. Choose to go red with a red bell pepper rather than a green. Added one small hot red pepper finely minced. Liked the black olives in the soup. Used fresh coarse cracked pepper and milled seasalt. Made the croutons but did a double batch. Put a spoon of basil pesto on top of the soup in the bowl. Didn't make the side of chopped egg or cuc diced. Basil and other herbs were fresh from the garden.

Sweet-Sour Red Cabbage

This came out great. Think that the head of cabbage I had may have been on the small side. Wish the recipie had it by cups of shredded cabbage or by weight. Did shred in a food processor. Used a 12" rondeau pan so it was easy to cook bacon and plenty of room to mix apples onions and cabbage. Came to boil fast slow cooked 30 min a 2 on electric glass top and it was a great soft but crunchy stage (aldentae?). Now I'll play with it as others have to suit our own ideas. Had it with pork chops off the grill.

GREAT won't last a month. Had to make a new batch after one week. Had to use apricot brandy for a batch and it was a bonus. I will try other brandies but fear to change what is perfect. I did set out butter and eggs to room temp. before using. Sifted flour into measuring cups and tried to not beat too much when adding dry ingredients.
