Spinach and Feta Pita Bake

Wow!!! It's been a long time since I ranked something a five without saying "with the following changes". This is fantastic as is. I'm sitting here listening to my husband rave about this saying I have to make this for his mom!!! That's saying something.

Joy's Prizewinning Trifle

Brought this to a work picnic and it was hit! Made a few minor changes per others: Used cheesecake instant pudding and mixed with one cup milk before folding in. Used light sour cream and light cool whip (used a little more of each - closer to 12 oz of sour cream and 16 oz of cool whip). Omitted bananas, but added blueberries and raspberries to the pineapple. Made this the day before so flavors could blend. It was great!

Dijonnaise Chicken

Wow. Amazing that something this simple was so great. Used half olive oil amt, omitted salt, and made own Dijon mix (.75 parts light mayo, .25 parts Dijon). Yum!!!

Taco Pie II

Made this awesome dip with the following changes -Used chili with no beans and mixed with half can of refried beans and half a package of taco seasoning. For the cream cheese I used half low fat and half regular.

BLT Dip

This was amazing. I used the combination of all the most helpful reviews which equated to- a can of diced tomatoes drained with paper towels for a few hours. For the main mixture, which I let sit in the fridge for five hours, i added green onions, about 4oz of cream cheese and little less mayo and little more sour cream than the recipe called for. I added some shredded cheddar cheese and used almost two jars of pre cooked Hormel bacon and recooked in microwave for 3 minutes. Served with Fritios and It was a huge hit!!!!

Chocolate Eclair Dessert

Easiest dessert to make, but it comes off as something that took a lot of time! Per others, I use french vanilla flavored pudding and chocolate fudge Pillsbury frosting (melted in microwave for 40 seconds before pouring). Everyone loves this and I get requests for it all the time!

Marinated Ranch Broiled Chicken

Big hit! I followed the recipe exactly (marinated for 2 hours) except I doubled it so I could cook 4 chicken breasts and I only had tarragon vinegar on hand so I used that instead of the red wine flavor. I broiled on the top rack (500) for 18 minutes. So easy and so good. My husband couldn't wait to have the leftovers today (which were great btw, even cold and a day later).

Broiled Tilapia Parmesan

Amazing! Used low cal mayo, light butter, and added old bay seasoning and panko to the ingredients. Husband said it is the best fish I have ever made. My parents are having cod tonight and I convinced them to let me use this topping vs. cooking on the grill. Can't wait for them to try.

Beaumont Ranch Potato Salad

This was great! I made the recipe for five, so basically just over a pound of red potatoes were needed. The only changes I made: cut the potatoes ahead of time like one reviewer said, spilt the mayo called for between light and regular, and I used a little less olive oil. I also used the dill pickle called for. It was really good and it doesn't call for the typical number of ingredients in a potato salad receipe.

Red, White and Blue Burgers

Omg! My husband was coming home from Europe and I wanted to make him a great home cooked meal. This did the trick. I bought a little over a pound of 93% ground chuck, used a full packet of ranch (1oz), about 3oz of blue cheese and beforehand grilled half a sweet onion to add to the mixture. So juicy and flavorful! He said no debate between four and five stars......defnately five....I agree! Thanks for a great burger.
