Peach Kuchen

Very good basic recipe, no one wants to eat the exact dish every time. I made the first recipe exactly as stated, but when it was placed in the pan, I didn't think there was enough. So I made a second batch, this time using almond, instead of vanilla. I placed one batch right on top of the other. When I found it a bit dry to work with, I added peach juice, or dripped my spatula into the juice to spread. In the end, the cake was a bit thick for the fruit. The next time I made it, I double the recipe, and placed it in an inch larger pan and it worked just great. 1/2 vanilla and 1/2 almond extract is a good alternative.

Juicy Peach Crisp

Excellent recipe--Thank you CLYN for sharing. I made changes--but not because the recipe was lacking--but rather, for our desire to reduce white flour and sugar in our diet. I reduced the white sugar to a 1/2 cup and substituted 1/2 c brown flour for the cup of white and added 1/2 cup of oats. Quick and easy to make when you are in a hurry. Thanks again!!

Old Fashioned Peach Cobbler

I have almost entirely quite using this site. I am so sick of these "better than thou" cooks who take a recipe, then change it beyond recognition. This recipt is fine, the orange juice changes to peach flavor rather than the reverse, the pie crust is fine--use a pastry marble pin and board-- or make slightly more. But if you are experienced with pie crust, as I said, the recipt is fine. The one and only change that may be necessary is to add more cornstarch. Flavoring changes are always optional, and dependant on ones tastes.

Greek Pasta Salad I

I thought this salad was great!! I made it with the bow tie pasta, as that is what I had on hand. Unlike the others, I did not find the vinegar too strong. I did not change a thing except I used deli salami instead because my daughter does not like pepperoni. Thaks fjor sharing.

Spanish Rice II

Very good basic recipe!!! I used 1/2 bacon grease & 1/2 olive oil and beef broth for cooking--if you use canned broth--omit the salt. I also used 1 tsp. mild chili powder and 1 tsp. regular chili powder--this will give the dish full flavor without so much heat. When I warmed it up, I sauteed some green onions to include & heated in the microwave with cheese on top--just to change it up for leftovers.

I thought this to be a good basic recipe. To turn out well begin with room temp. milk & eggs and sifted flour. I whisked the eggs & other ingredients (leaving a few flour lumps), rested the batter, whisked again briefly, placed in warmed custard cups, & baked at 450 for 15 minutes before lowering temp. When you open them, let the steam dissipate before buttering. If you live in high places, popovers turn out best using high altitude flour.

Jenny's Black Forest Cake

I made this cake twice, the first time without the cherry liqueur and the second time with. I certainly recommend taking the time to locate the liqueur and using it (although it is a bit expensive)!! I did not use canned pie filling (I don't like the corn syrup base and it does not contain enough cherries) I used frozen cherries, sugar, cornstarch, butter & almond extract to make my own, it is far less sweet. I also whipped up some fresh whipping cream and placed it in between the layers and on top. The chocolate cake was excellent. Great recipe--thanks for sharing!!

Sweet Corn Bread

My family loved this recipe!! I am not as fond of corn bread as other quick breads, but even I enjoyed this recipe. It was not so dense and dry as most corn breads. thank you!!

Bacon Roasted Chicken

Very good recipe. The chicken was flavorful and vers moist. I did season to my liking some--I added garlic, onion, salt and placed an onion inside. Just a personal choice.

GA Peach Pound Cake

I thought this cake was very good. I used a Teflon bundt cake pan, cooked it 1 hour and 15 minutes and it came out fine. I like the sugar and butter coating created from the pan. But if I were to serve it for company I would sprinkle it with powdered sugar. I also added 2 tablespoons of Gourmet Peach Flavoring, as peach can be a weak flavor and it added a bit of moisture.

Peach Muffins

I thought this recipe was very good. I like nutmeg, so I cut back the cinnamon and added some. I also added the suggested 1/2 cup of milk, we live in high altitude, so more moisture is needed. My grandmother taught me to dissolve baking soda in fluid before placing it in the recipe to avoid its flavor when finished, so I put it in the milk. Since my peaches lacked a little flavor last year, due to drought, I added a little peach flavoring.

Fresh Southern Peach Cobbler

I liked this recipe very much, except the topping over the crust. I thought it made the entire recipe too sweet, with too strong of cinnamon flavor. The next tiem I make it, I will simply sprinkle a smaller amount of cinnamon, perhpas mixed with nutmeg over the top for the colour contrast.

Cottage Cheese Chicken Enchiladas

Thank you Crystal for submitting this recipe the enchiladas they were really good!!!! But I did agree with another reviewer about the sauce, not the submitters fault, I used a canned variety. Somehow the wonderful flavor and texture of the enchiladas did not go with the red sauce, which is odd for me to say because I do not like the cream sauces. But there is a little hole in the wall mexican restaurant near me that seems to have red sauce that has melted cheese put in and it reduced the harshness of the spices in tomatoe. Perhaps I will try that. Great recipe!!!

Apple Enchilada Dessert

I did not care for this recipe at all!! It is easy to make, but the effort you put into preparing a dish is what you will get out. Baked apples or apple crunsh or something simialr is easy as well--with better flavor and results. No one in my family would eat more than what was put on their plates, which was a 1/2 of one tortilla.

Aunt Jewel's Chicken Dressing Casserole

I did not care for this recipe at all. My daughter "kind of liked" the sause and chicken. I did not want to boil my chicken because I thought that would take away much of the flavor. I instead put it on a baking sheet at 350o for 25 minutes or so, or until the juices ran clear. But inspite of using a low sodium broth for the dressing, I thought this dish was so packed with salt from the packaged dressing and canned soup that it was almost inedible!! I marinated the chicken for more flavor, but that was even lost in the sauce. If you really like the flavor of canned soup--you might try this.

German Chocolate Cake III

I thought this recipe was very good. However, I have been using the German Chocolate Cake recipe given in the Baker's german choc. squares package for years. If you match ingredient for ingredient they are almost identical. However, their frosting recipe comes out in better proportion to the cake (one recipe of this one is not enough to cover the cake --doubled is too much). I did flour the pan with cocoa and flour like a previous viewer suggested and it worked fine, the Baker's recipe recommends lining the bottom with paper. I also toasted the nuts as recommend by another viewer and I will continue to do that in the future, it tastes much better than raw nuts on top. I have always used 1/2 condensed milk and 1/2 evaporated milk for the frosting. I think if you try this you will have a richer tasting frosting that takes less time to cook and stays in place on the cake better as well. Good recipe--but similar to what I had.

Down Home Macaroni and Cheese

This is a good basic recipe for mac and cheese. But unless you like you food rather bland, it does need some work. Like the others, I found the noodle cheese ratio to be out of wack. So I made extra noodles and ended up almost doubling the recipe. I used sharp cheddar cheese and added 1/4 teaspoon of mustard powder the same of pepper, ground garlic and onion powder. I received several compliments and everyone including small children liked the flavor. Although at first, the children were reluctant to try it, I think the bread crumbs on the top prevented them from recognizing the dish. Next time I will try broken up potato chips instead.

Dump Bars

This is a very good brownie recipe!! I would especially recommend it to those taking a dessert dish to picnic or other outdoor gathering because it is easy to distribute. It is very chewy and does not have all that sugary frosting. I did add a 1/2 cup of nuts, but wished later that I had put in a cup, there wasn't quite enough. I received several compliments (men especially like this brownie--maybe because it has more substance and less frosting). Thank you for sharing!!

Three Cheese Garlic Scalloped Potatoes

This potato dish is very good!! I did omit the butter, used half and half instead of cream, and added a 1/4 cup of finely chopped onions. KarlaLV says to use provolone in her recipe and I agree. The smokey flavor adds a taste that cannot be had with mozzerella. Thanks Karla!!

Mall Pretzels

These pretzels are terrific, Thank You Ms. Yee for sharing!!! I did find it easier to stretch the dough only two feet or so, bath the dough-drying the drips, then finishing the stretching. But next time I think I will not make them quite so thin. I don't know the monatary savings (I am not a mall shopper) but the memories of a warm kitchen filled with the smell of yeast is priceless as I look back on my childhood and I am sure the same will be true for my daughter. Oh yeah, if you do not have parchment paper--a greased baking sheet worked great for me.
