Slow-Cooker Chicken Tortilla Soup

My entire family loved this - my 7 year old said it's the best thing I ever made. I did modify it though... I didn't have enchilada sauce or chiles so I tossed in half a jar of medium Pace salsa which helped make it a bit thicker - no onion because it's already in the salsa. I did 2 cups of chicken broth and no extra water. In a pinch - and my kids preference - multigrain tortilla chips crumbled up on top.

Apple-Cranberry Crisp

I made this for company one night and they told me it was the best crisp they've ever had! The fresh cranberries made this recipe. I cut the cinnamon down by half to 1 1/2 tsp and that was plenty. I only had a handful of sliced almonds so I threw them in the topping instead of pecans. Will definitely make again... also made it with spartan apples and it was still good.

Beef Bourguignon II

I couldn't even find canned onions at the grocery store so I didn't bother adding those in, but did use all the wine the recipe called for (some leftover shiraz) and LOVED it! Served it over egg noodles and it was a big hit - the beef was so tender. I thickened the sauce with water/cornstarch and loved the subtle wine notes leftover in it. This was an amazing dish that I'll make again and again especially for company!

Serbian Ground Beef, Veggie, and Potato Bake

I made a few alterations and it was a big hit with my husband and my 3 year old. I didn't have cloves so I threw in a pinch of allspice instead. I doubled the red wine and had to use chicken broth instead of the beef bouillon cube. I doubled the potatoes and instead of 1/2 and 1/2, threw in a can of reduced fat cream of mushroom soup. It was amazing!

Heavenly Hash Cake

I took this to a friend's open house and everyone asked for the recipe! It is delicious! I put the cake back in the oven for a few minutes after I put the marshmallows on top to melt them a little better. This recipe was amazing!!

Mocha Chocolate Chip Banana Muffins

Surprisingly light muffins. Delicious! I think I might try them with mini chocolate chips next time as I made my muffins smaller and got 2 dozen out of the recipe. These were amazing though!

Apple Crumble Pie

Nice change of topping to have this crumbly mixture instead of traditional streusal topping. I would add flour next time though to thicken up the sauce with the apples as it was a tad runny but the flavor was delicious!
