This is my new favorite recipe. My husband loves it, also. The first time i made it, I used all 2 1/2 cups of the half and half. The second time i made it I only used 1/2 cup of half and half and an extra cup of chicken broth and it was just as good, if not better. And it definitely had fewer calories by only adding 1/2 cup of half/half. I think you could also get away with adding NO half/half and it would still taste very good. I did add a few shakes of poultry seasoning, which is just a personal preference. Also used the entire chicken, white and dark meat, and only 3 potatoes, but they were very large potatoes.
