Orange-Ginger Tofu Triangles

This is a very flavorful way to serve tofu. I left out the green onions (don't like them) and chiles. I like it using orange juice, but I sometimes substitute juice from one lime instead - yummy! Also, instead of pressing the tofu, I pre-cut them into triangles and place them in a jar overnight. This drains the excess water out of the tofu the same way as pressing it.

Shrimp Linguine Alfredo

Suki's Spinach and Feta Pasta

Awesome! So light and delicate, and so beautiful to look at. I didn't have penne, so I used seashell instead. I also cut out the mushrooms. Next time, I might add a bit of lime juice and some pine nuts.

Urban Legend Chocolate Chip Cookies

Very soft and tasty, although I made a few changes. Instead of using grated chocolate, I just melted down 4 oz. of chocolate chips, and mixed it in in the very last step. It made it look very unique and tasted great! Also, next time I'll add about another cup of oats, and only grind down about half of it- I like the texture of oats.

Corn Casserole I

Super easy and pretty tasty. I used light butter and Light Velveeta. Next time, I will use 1 1/2 cups of cheese, and drain the corn. Also, it only needed to bake about 50-55 minutes.

Fudge Truffle Cheesecake

Yummy! I even used 1/3-less fat for part of the cream cheese, and it was still incredibly rich. Be sure to use high quality chocolate for both the chips and the powder. It was perhaps a bit too soft after baking for only 55 minutes (and cooling). Next time I'll cook it 5-8 minutes longer so it's a bit firmer.
