Cherry Pie III

This is my favorite pie of all time! I made it for Thanksgiving and took some of the suggestions of others. I used 3 cans of Oregon Fruit tart cherries and drained them really well. I omitted the extract entirely. I used Pillsbury pie crust which made making these a snap. You really have to boil the filling or it won't thicken. This tends to mash up the cherries, so I might add the third can late in the cooking process to keep some of their shape. I can hardly wait to make this again! Yum yum!

Oranged Cranberry Sauce

I cut this recipe to make 16 servings because I didn't have enough cranberries. Made it for Thanksgiving and it went really well with ham and Cranberry Nut Bread I from this site. It's good hot or cold and super easy to make! It just needs an occasional stir while it simmers away.

Strawberry Oatmeal Breakfast Smoothie

This is a fun way to sneak in some more whole grains. I blended the oats first, till they were powdery. It is definitely pastey consistency, but I don't mind it. I used regular milk and frozen bananas. Tried it without the sugar, but ended up needing it. It's a great starting point for other fun creations!

A Very Intense Fruit Smoothie

This was pretty sweet for my taste. Next time I will omit the honey and canned fruit. I will use mixed berries and orange juice. It is a thick smoothie that can be eaten with a spoon, making it seem like an indulgent dessert!

Baked Kale Chips

This is similar to the way I like to prepare broccoli. It totally changes the flavor. I really like the crunchy texture bc it leaves me feeling satisfied. I don't enjoy dragging out the salad spinner, so next time I think I'll towel dry it. Some leaves may still be a little wet when it's done cooking, but if you let it continue to sit on the cookie sheet, it will evaporate off. I topped mine with Seasoned Salt. Fun way to eat your veggies!

Berry Oatmeal Muffins

I made a few changes. Used half whole wheat flower, half AP. Skipped the nuts. Used 1/2 cup applesauce, plus 1/4 oil. I doubled the blueberries & used frozen. I skipped the topping. I didn't have quick oats, so I soaked regular ones in the milk before using them. I think this accounts for the chewy bits/spots in the muffins. They also didn't need 20 minutes to cook. The muffin texture is really nice and soft not heavy, even though they don't rise much. The muffins are tart because of all the berries, and I'm glad I sprinkled raw sugar on the tops to balance it out some. Next time I'll definitely make sure I have the quick oats.

Grilled Cheese Sandwich

I like to use Arnold Health Nut bread for crunchiness, 1.5 slices of Velveeta for creaminess, 4 slices of cooked bacon for saltiness, and lots of sliced tomato for a touch of sweetness. I really enjoy reading everyone's variations! Gonna have to make one tomorrow.

Heavenly Angel Food Cake

Absolutely delicious by itself! Made exactly and had no problem. I even got a little bit of yellow in with my whites & they still beat up beautifully. Now to find something to do with all the left over yolks.

Sean's Falafel and Cucumber Sauce

REALLY good, but I have nothing to compare them to since I'd never had falafel before =) Had them on a whole wheat pita, with Chili-Lime Chicken from this site. Looking forward to having it for leftovers. Kind of reminded me of a veggie burger, but more moist. Will definitely go in the dinner rotation. (Only fried them in a spritz of olive oil.)

Heavenly Blueberry Smoothie

I made this bc I'm sick and felt like I needed some nutrition. The only changes I made were to use whole flax seed and blueberry yogurt, since I had those on hand. This is good and the banana is not overpowering. I think I prefer a juice-based smoothie instead of dairy-based.

Roll-Out Cookies

I just sat down from making these. I forgot to add the egg initially, so the first batch was without it. They tasted fine anyway...hubby said he actually preferred those! He did say he'd like more sugar in the dough either way. Maybe I'll add 1/4c. to 1/2c. more sugar next time. I'll also cut back on the lemon extract by half, using only 1/4tsp. I rolled these extra thick, about 1/4inch, so they'd be soft & chewy. I cooked them for about 10 minutes and then let them sit on the hot tray for a while. It made about 32 cookies. I guess I don't like the hassle of painting on the icing. I ended up dumping the cookies in the bowl of icing face down & then giving them a shake. I think I'll stick with the colored granulated sugar, especially for Christmas.

Tangy Honey Glazed Ham

This is a keeper! Delicious! It's sweet and tangy. I didn't have cloves, so I used a little cinammon. I also omitted the zest because I didn't want it to be overpowering. I won't be using any other recipe.

Homemade Refrigerator Pickles

A good starting point. Based on other reviews, I cut the sugar back by more than half and skipped the peppers. Will play around with it more next time. I will make thicker slices of cuke, add some spices, and cut out the sugar entirely. I really want a cukey, half sour pickle.

Chicken Pot Pie IX

Delicioius! I usually skip the peas, and add tons of sesame seeds on top. Broccoli is a nice addition too! I used the Pie Crust IV recipe from this site, and only used a top crust. Sometimes I make them in ramekins, and freeze them. Never met a pot pie I didn't like =)

Amazing that corn and beans can taste this good! I always add tomatoes and tons more cilantro. Sometimes I'll top it with a little bit of avocado. Very pretty and travels well!

Flourless Peanut Butter Cookies

I used this recipe as inspiration. It's hard to follow it as written when there are so many good suggestions! I used 1/2 cup white and 1/2 cup brown sugar. I added a dash of salt and splash of vanilla. I used one egg yolk added to the wet ingredients. I whipped 2 egg whites separately and then folded those into the heavier ingredients. It yielded 2 1/2 dozen cookies that were thin and chewy. Had to increase the cook time to 13 minutes and then let cool fully on the sheet. They were well received by a gluten-free friend.

Evelyn's Rolled Sugar Cookies

The dough was only slightly thicker than a muffin batter, even after being refrigerated. The cookies distorted as I tried to place them on the cookie sheets. I added vanilla and decorated with sugar, but they were still bland! Sorry. The hunt for lactose free cookies continues...

Morning Glory Muffins I

I absolutely LOVE these! The food processor makes quick work of the carrots and apples. Nutrition in disguise. They get more moist the longer they sit. I also keep some in the freezer.
