Peanut Butter Cocoa No-Bake Cookies

Hubby liked these, but I thought they were too sweet. Will make for him again. Might cut back on the sugar. I like the texture.

Berry Oatmeal Muffins

I made a few changes. Used half whole wheat flower, half AP. Skipped the nuts. Used 1/2 cup applesauce, plus 1/4 oil. I doubled the blueberries & used frozen. I skipped the topping. I didn't have quick oats, so I soaked regular ones in the milk before using them. I think this accounts for the chewy bits/spots in the muffins. They also didn't need 20 minutes to cook. The muffin texture is really nice and soft not heavy, even though they don't rise much. The muffins are tart because of all the berries, and I'm glad I sprinkled raw sugar on the tops to balance it out some. Next time I'll definitely make sure I have the quick oats.

Homemade Flour Tortillas

This was my first attempt at tortillas. I was pretty excited to try bc I've had them fresh-made in CA. The first few looked good, but weren't flexible when cooled. They were as thin as the ones you buy in the store. The next few I tried were much better. I made them about 1/8 inch thick and didn't cook them until they had brown bubbles. With this method, the recipe would make fewer/smaller ones. I would definitely try them again. I might try adding another tablespoon of lard. (4 cups is alot of flour!) Oh, and I found that I needed to wipe the excess flour from the pan after about 5 tortillas, otherwise it began to smoke. And, I didn't worry about making perfect circular shapes =)

Too Much Chocolate Cake

I made this into individual cakes with my new rose-shaped cupcake pan. Only took 37 minutes to cook them. It is very rich...so rich that I added a raspberry glaze to the top for some acidity. It was a bit hit at the housewarming party I attended. Next time, I might substitute 1/2 c raspberry jam for 1/2 of the oil. I also substituted mini choc chips for regular ones. Definitely would recommend.

Best Ever Blueberry Cobbler

This is a ten star recipe! I will never make another cobbler recipe again. I doubled the recipe and used 3c peaches and 3c blueberries. I ran out of eggs (gasp!) so I only used one. I topped it with turbinado sugar after it finished cooking. It made it sparkle and gave it a little crunch. I'm in love!

Mom's Zucchini Bread

I had never made zucchini bread before, and only tasted it for the first time recently. This was moist and tastey, but next time I would prefer to add nuts or maybe a light frosting to jazz it up. Hubby was surprised that he liked it too. Good for breakfast or snack.

Morning Glory Muffins I

I absolutely LOVE these! The food processor makes quick work of the carrots and apples. Nutrition in disguise. They get more moist the longer they sit. I also keep some in the freezer.

Overnight Cinnamon Rolls I

When I first made this, I was multi-tasking and got the dough confused with my one for pitas! It was still edible, but I had to try again. They were good. I think you could do the overnight trick with almost any other recipe too. Some of the filling seeps out of the rolls overnight. I also think I will add cinnamon to the dough next time. These are very pretty.

Syracuse Salt Potatoes

These are yummy, not too salty. Much cheaper than buying the kit to make Salt Potatoes...they are just potatoes packed with a bag of salt! I reheated mine in the Crock Pot...which I wouldn't recommend. Great at a picnic.

Cornell Chicken Marinade

I didn't intend to marinate it for 3 days...just got busy with other things. I think this contributed to it being very salty. Next time I'd cut back by half. I also only made 2 split breasts. This think this also affected the saltiness. Overall very good. Served with rice and green beans. Will make again.

Heavenly Blueberry Smoothie

I made this bc I'm sick and felt like I needed some nutrition. The only changes I made were to use whole flax seed and blueberry yogurt, since I had those on hand. This is good and the banana is not overpowering. I think I prefer a juice-based smoothie instead of dairy-based.

Snickerdoodles II

Used butter flavored Crisco, which I think lent a weird sour/chemically aftertaste. Never used it before & wanted to try it before holiday baking ensues. The texture was great, though they didn't spread very much. Probably will try another recipe next time.

Buttery Soft Pretzels

Yum. Made these for lunch one day, anticipating that I wouldn't be able to stop eating them. At least I saved calories by not eating them in addition to lunch =) These were good. Melted some butter and tried them with salt and mustard, and also with cinnamon sugar. Also good cold, although the sweetness is more noticeable. Not as chewy as I might have liked, but easy. I would suggest rolling them the width of a dime or less as they do rise some.

Oven Roasted Greek Potatoes

Made changes here too. Didn't have marjoram, wine or dressing. I went heavy on the lemon and that was the predominant flavor. Cooked at 400 for 45 minutes. Enjoyed the texture alot. Will make again with Italian flavors.

Spanakopita (Greek Spinach Pie)

Great! I made a few changes. I used lots more phyllo because I like the crunch. I used frozen spinach, added fresh dill and salt, and used butter instead of olive oil. My friend recommended that you can freeze uncooked and it keeps well. Will be making again.

Chicken Andouille Gumbo

Pretty good, but needs more meat. I couldn't find andouille and I short cut the chicken. My first attempt at the roux burned, but the second attempt was fine. Got it to peanut butter color on a low-med temp. I used frozen okra, which I dumped in at the end. Couldn't find file powder either. I made hush puppies to go with it. I wouldn't have wanted it any spicier. Time consuming, even with my short cuts. Definitely would make it again. Made this again. I think you could easily cut the oil in half. Very yummy! Made cornbread to go with it. Froze a bunch of it for quick fall dinners.

Michelle's Famous Washed Cranberry Sauce

Delicious. I prefer this over cooking it into a thick mono-textured sauce, though I like that too. The berries retain their shape and make a thin sweet sauce for them to swim in. Tart and good. I'll definitely be eating cranberries more often!

Wilted Spinach

Sooooo good! I used a bag of fresh baby spinach. 3 minutes was too long for me, so I'll try 2 next time. I made a half batch of the "dressing" and it was perfect. It made it to have with ham steak, which added the saltiness I wanted. (I used lemon juice out of the little plastic lemon since I had no fresh and I toasted my pinenuts.)
