Balsamic Roasted Pork Loin

I LOVE balsamic, but did not like this. It tastes better cold than warm. I plan to re-purpose the leftovers into something more palatable. Maybe pork fried rice or Cuban sandwiches.

Easy Meatloaf

Mmm...meatloaf! So yummy and comforting. I added ketchup and mustard to both the meat mixture and the top of the loaf because that's the way my mom makes it. If you have a family, I'd consider doubling the recipe so you have some leftovers. It's hard to be a grilled meatloaf sandwich ;)

Russian Tea Cakes I

Exactly what I was looking for! I made my dough and then chilled it overnight. The next day, I let it warm up some, cut it into portioned squares, rolled them into balls, re-chilled them for 15 minutes and then baked them. I rolled them in sugar when warm. I carefully used a fork to avoid breaking them. They took a lot more sugar than stated. Definitely a keeper! Oh so good!

Hot and Tangy Broccoli Beef

Pretty bland, even with a ton more fresh ginger and fresh garlic. Next time I'll add a several tablespoons of each. Plus a teaspoon of hot chili paste. I also added Chinese cabbage and carrots for color and texture. When I ate it, I pour on more soy sauce and it was decent. Smelled great cooking & is a good base recipe to adjust to your taste. Thanks for sharing.

Indian Chickpeas

LOVE this! I used this recipe as a base and then altered it with additions from Cholay and Chickpea Curry on this site, mostly for more spices. This is so good, I could eat it every week. The leftovers became even more delicious too! Yay for leftovers!!!

Shahi Paneer

This was my first attempt at making Indian food at home. I got impatient with my Paneer by Amibould & didn't end up frying it. It fell apart a little and didn't have that nice texture on the outside- totally my fault. I fried the (uncooked) leftovers the next day and they turned out better. Also, I think I'll chop my onions instead of slicing them because they were a bit stringy/messy to eat, like noodles. I might look for a spicier recipe or just up the spices on this one next time.

Really good, but a little lengthy to make. There were really chewy when reheated, but I kind of like a little fight from my food when I'm not eating meat! I just piled on the leftovers & that helped to soften them a bit. I'll probably experiment with keeping the raw dough in the fridge & cooking them off later in the week as needed.

Absolutely Perfect Palak Paneer

I made a couple of substitutions for what I had on hand. I used the Paneer recipe by Amibould instead of ricotta, and I didn't have sour cream so I used regular cream. This is soooooooooooo good! Leftovers got yummier with age too. Ate it over Naan by Mic.

Cranberry Hootycreeks

Really yummy. I doubled the recipe because making 18 is hardly worth the mess! I was short 1/4 cup of butter, so I sub'd olive oil. I think that probably helped them to spread better when cooking. I also added a full cup of grated coconut. The final product was really tastey, but a little crumbley bc of my additions. I also used mini choc chips which I think helped to disperse them better. I'll definitely make them again, but I think I'll either add more salt or cut back on some of the sugar. Just my personal preference. PS- I made them for me to eat, not as gifts =)

Easy Butternut Squash Ravioli

Really good, but makes way to much filling. I used the extra filling as a sauce over pasta. These freeze well and are tastey in a butter/sage sauce.

Homemade Refrigerator Pickles

A good starting point. Based on other reviews, I cut the sugar back by more than half and skipped the peppers. Will play around with it more next time. I will make thicker slices of cuke, add some spices, and cut out the sugar entirely. I really want a cukey, half sour pickle.

Soft Christmas Cookies

Not a big hit, though they were easy to work with. I made the dough one night, stuck it in the fridge and made them the next night. I LOVED the trick of rolling it between two sheets of parchment paper! I thought the cookies tasted like margarine while hubby thought they tasted floury and not sweet enough. It's hard to find a good lactose-free recipe. I might give it another try with half margarine and half shortening. Thanks for sharing.

Chicken Pot Pie IX

Delicioius! I usually skip the peas, and add tons of sesame seeds on top. Broccoli is a nice addition too! I used the Pie Crust IV recipe from this site, and only used a top crust. Sometimes I make them in ramekins, and freeze them. Never met a pot pie I didn't like =)
