This is the best carrot cake I've ever eaten...and I MADE it! I made some changes as well - I didn't put in the raisins or the coconut and put another 1/2 cup of shredded carrots instead. The bought the pineapple in slices but then put it in my blender to crush/liquify it which added to make the cake have a moister texture. For cream cheese icing, I used:
1 (8 ounce) package cream cheese, softened
1/4 cup butter, softened
2 tablespoons sour cream
2 teaspoons vanilla extract
1/2 (8 ounce) box powdered sugar
Everyone who had a piece of this cake loved it! I definitely recommend it and I have my second batch in the oven right now...fingers crossed that it turns out as great as the first one! :)
