Pilgrim Pumpkin Pie

Awesome. Doubled the recipe and made 2 pies and crusts. Used half honey, half sugar because I didn't want to use all of my expensive honey in one recipe. The pie dough is very sticky so be sure to use the advice of another reviewer and roll between 2 sheets of cling wrap for better handling. Yummm!

New England Clam Chowder II

Yummmmm. Quick and easy. I used 3 cups clam juice leftover from steaming 50 clams. Used leftover bacon fat. Omitted flour accidentally but kept it that way because I like thin soups and chowder. Added 2 diced carrotts. Absolutely delicious.

Garlic and Olive Oil

Yummy, yummy, yummy! Added 3 sliced green onions to the dressing. Served with leftover, cold, grilled Norwegian Salmon on a bed of mixed spring salad greens. It was perfect. The light, lemony, flavor complemented the dish well.

Alfredo Mostaccioli

This is a good basic recipe that can be easily modified to cook's preference. I sautéed fresh garlic and 1/2 lb. fresh spinach in the butter, omitted the parsley, and followed the remainder of the recipe. It makes a nice, light alfredo sauce.

Baked Squash and Maple Syrup

Very good side dish for autumn meals. I baked the squash for 90 minutes and didn't add any chicken stock and the consistency was good. The only other thing I will change when I make this again is to use less onion; it competed with the squash for the dominant flavor.

Orange Rice Pilaf

Overall I have to agree that this dish is rather bland but I do think it has potential. As I was squeezing additional fresh orange juice into the pan with the sauteing celery and onion, I accidently dropped chunks of orange segments into the mix and decided to leave them there. In fact, I added the flesh of 1 entire orange. I will play with this recipe again and I encourage others to experiment with it too. A few things I would recommend: Add the zest and flesh of 2 oranges and replace at least half the liquid in this recipe with orange juice.

Vegetable Pizza I

My gut feeling told me not to use mayo in this recipe. I should have listened. The mayo flavor overpowers the cream cheese and the vegetables. It tastes like mayo pizza. I made it a 2nd time with sour cream in place of mayo and it was great.

Jamaica Cake

Deliciously moist, easy and fast since it's mixed right in the pan and there's no need for frosting or topping of any kind. I followed the recommendations of other reviewers; reduced oil to 1 cup, used half brown and half white sugar and added 1 teaspoon of cinnamon (though I'm not sure the cinnamon was necessary). Then gently mixed it right in the pan as directed and baked. Fabulous recipe!

Creamy Spiced Coleslaw

Great recipe. Ditto Nicky's review: fast, easy, delicious. I made one little change out of fear that the slaw would be too sweet. I cut the sugar to 2 teaspoons instead of 2 Tablespoons.

Appetizer Mussels

Absolutely Fabulous. The flavor, appearance and ease of preparation make this dish simply delicious. I made only minor changes: 1 cup clam/tomato juice and 1/2 cup white wine(instead of 3/4C of each), I did add 1 can of chopped tomatoes as recommended by another reviewer and I reduced the liquid before adding the mussels. I can't wait to make it again.
