Good Old Fashioned Pancakes

French Toast Casserole

I made this exactly as the recipe says except I waited 10 minutes after pouring the custard over the bread, then stirred it again to get the dry pieces covered, then proceeded to add the butter, sugar and cinnamon. It turned out perfectly and so delicious! Will definitely make this again.

Foolproof Rib Roast

I've never tried cooking a rib roast before, and had mentioned this to the butcher. To help me out, he inserted one of those pop-up timers in the roast. I followed the instructions exactly, and was rewarded with a juicy pink-in-the-middle roast that was incredible. I was worried when I finally removed the roast from the oven as the timer hadn't popped up. However, after tenting the roast with foil and letting it rest 20 minutes, when I uncovered it the timer had indeed popped up. I can't believe it came out so well, and that it was so incredibly easy! Mine was a 5lb roast with ribs attached, cooked uncovered. I'll definitely make this again.

Creamy Blueberry Pie

Very simple to make and so delicious! I didn't have sour cream on hand so instead substituted plain greek yogurt which tastes practically the same and the texture was very nice. I took this pie to work and it was a big hit! (If you dislike making pie crust, yet dislike pre-made crusts even more, see if you can find Marie Callendar frozen pie crusts in your store. They are delicious compared to any others I've tried.)

Oatmeal Pancakes

I made these pancakes substituting one pack of the Weight Control instant oatmeal in maple & brown sugar, eliminated the sugar, used 2% milk, and reduced to just two tablespoons of melted butter. The batter was thin at first but thickened nicely after resting for about 10 minutes. The pancakes were delicious! Moist, fluffy, and with a wonderful oatmeal flavor. Next time I think I will add 1/4 tsp of salt to balance the flavors, but overall this recipe's a keeper.

Barbarella's German Pancakes

I followed the recipe exactly, and was disappointed. The pancakes were extremely eggy and hard to flip as there wasn't quite as much flour in them as I felt there should be to really hold their shape. My grandmother made German pancakes throughout my childhood and hers were more crepe-like and not nearly so sweet. I won't be making these again.
