About this Cook
I'm a Christian wife and mother of three beautiful and interesting kids. I have always been fascinated with food even when I was a small child. I would watch cooking shows before there was ever a Food Network to watch (you can imagine my elation when that finally came!). I love to cook, to create, to taste, to smell and to share delicious foods! I hope to one day add recipes here on the site, but as for now, I'm enjoying trying different recipes that all of you lovelies share here on allrecipes.com. Thanks for reading about me and happy cooking!
My favorite things to cook
I like to cook all types of things, but my favorites are: baked chicken (garlic, bbq, etc.), sauteed tilapia w/ onions, fried chicken, fish and pork chops, grilled steaks like T-Bone, Porterhouse and filet mignon, of course, grilled pork chops, sauteed sausage and peppers, bacon...yummm... Veggies: Green Beans, Kale, Asparagus, California Melody (broccoli, cauliflower, carrots), potatoes (diced and mashed), portebella mushrooms, cabbage...oh, I could go on and on lol. I also like to cook Jasmine rice, Marinara sauce and pasta, and coconut cornbread.
My cooking triumphs
Baked a awesome Chocolate Cake from scratch! It was so yummy that my kids don't want store bought cakes anymore for their birthdays! Learning how to bake is surely a triumph for me!
My cooking tragedies
Being a cook, there are so many lol... especially when you are hungry and ready to eat! I know that I have scorched some things and dried out a few things, too. I have learned to not cook while I'm super hungry, before I have a snack.

Thighs on Rice
This was very tasty. I did modify the recipe a little. I have a big family and we like leftovers so I doubled it. I used 3 cups Jasmine rice (really can't go wrong with it), four cloves of fresh garlic minced finely, omitted the onions and used an extra bullion cube for a total of five. Plus, I added a bag of frozen Pigeon Peas. The thighs had bones and skin, which I seasoned myself (no Italian seasoning) with Tony's Creole seasoning salt, dried thyme, dried rosemary, and black pepper. Cooked it in a roasting pan with lid on 350 for approximately 75 min. The whole family loved it. Definitely making this a regular.

Chef John's Fried Green Tomatoes
These were the BEST fried green tomatoes that I've ever had! My family loved them. I paired it with Chef Johns crockpot pot roast (made mine in the oven and tweek'd it a bit with beer) with mashed potatoes, mushrooms, onions and carrots. It was delicious!!!!

Mom's Sticky Chicken From 1972
This recipe was delicious! I tweeked it a bit, but not by much. Instead of using garlic salt to rub on my raw chicken thighs, I used Tony's Creole Seasoning to give it a kick of heat. I also used half cornstarch and half all purpose flour seasoned with a bit of salt and pepper for taste. I added about a 1/4 cup of Crystal hot sauce and a teaspoon of cayenne pepper to balance out the sweetness of the sauce. I also doubled the recipe for the sauce, so I have extra for another meal. I think I will try it on un-floured chicken next time, even though the crust was very good. I did baste it every ten minutes as instructed and flipped the chicken over half way through baking. My family loved it, especially my husband. I will definitely make it again!!!
