Chili Seasoning Mix II

This is the only chili seasoning I use anymore. And my chili kicks butt (in my humble opinion - I mean, I like it...). I do add a tablespoon or two of unsweetened cocoa for some added depth to the chili. This is my secret ingredient, and it makes it for me!

Turkey Brine

Not to gloat, but I ROCKED the Thanksgiving table with this turkey! It was my first ever, and I don't need to look any further. After brining, I rubbed the bird down with melted butter, salted and peppered, then filled the cavity with a mixture of orange juice concentrate, cloves, 3 garlic cloves, celery salt, and onion powder (kind of an experiment). I'm not sure which, that or the brining, flavored the meat so beautifully. Regardless, it made the meat, even the white stuff, moist and chock-full of flavor. And the gravy? Don't get me started! Like I said, I'm the self-proclaimed hero, and everyone else agreed. Oh, and I roasted the bird in a Reynolds Turkey Bag and let it sit for 45 minutes before carving it.

Steak and Spinach Salad

Deeee-Lish! We just had friends over for dinner and made this salad. Everyone went back for seconds - in fact, we polished it off, and made the kids eat other stuff... I used Poppyseed Dressing submitted by Paula on AllRecipes, and it was perfect. I also added gorgonzola, and it made it for me. I did try a bite with a bit of tomato, and decided tomato did not have the right taste for this salad for me, so I did not add the tomato to the whole salad. Huge hit! Will definitely pull out again when I have company I want to impress. Thanks.

Poppyseed Dressing

Absolutely delicious! We took a salad to a dinner group tonight, and everyone loved it. A friend said she makes a very similar dressing with a tablespoon of orange juice. I might try that next time too. I followed the recipe, except I added some raspberry flavored vinegar to the vinegar measurement. The onion really adds the perfect kick to the dressing. I'll be making this regularly.

Michelle's Blonde Chicken Chili

I won the Celestial Chili Award at our first annual chili cookoff at church with this recipe. I wasn't even planning to enter till a couple of hours before, and so this was literally thrown together at the last minute. I threw in a bunch of cheese (it was actually the kids' cheese sticks, cut up into small pieces) to melt into the chili, and think it added a great depth. Not to mention a lot of sinful calories... so I don't do that every time. But I do sprinkle some low fat mozarella cheese on my serving most times, and it's just the ticket. This is such an easy, forgiving, and delicious recipe, and I love telling those who beg for the recipe how easy it is to just dump several cans and a few spices into the pot. I don't have to be an amazing cook (which admittedly I'm not) to make scrumptious food! YAY! Thank you Michelle!

B.L.A.T. Wraps

We've had this recipe several times, tonight included. Tonight's were the best so far. I used spinach wraps, herbed mayo (per another reviewer's recommendations - regular mayo plus a bit of parsley, oregano and black pepper), turkey bacon (cut up in pieces, then fried the whole pkg. the leftovers freeze well and reheat in the microwave for next time!), tomatoes, lettuce, and since the store was out of avocados, I threw on some guacamole dip. It was perfect. When I have had the avocados, I do as another reviewer suggested and add a little lemon for extra zip. So yummy!

Fry Sauce

I've also made Fry Sauce for years. In fact, I'm famous for my fry sauce (at least at my house...). Red Robin serves a sauce with its bottomless steak fries (!!!!!) that uses BBQ and mayo. To die for. When the waiter told us about it, I about fell off my chair in excitement. I'm a Utah native living in NC, and no one but the people I go to church with know anything about fry sauce. Back to "My Fry Sauce", I add a little BBQ as well as A-1 along with the ketchup and mayo. Kicks it up just the right number of notches.

Best Spinach Dip Ever

My husband is allergic to dairy, so I used soy sour cream and cream cheese (Tofutti - highly recommended!) to make this recipe. He'd never had a spinach dip, and I gave him some as soon as it was mixed together. He said that I should make this any time we entertain, give it for holiday gifts, and that we probably should've made more. That sounds like it's a keeper. Oh, and I loved it too! I may be able to get my toddler to eat spinach... Can't wait to try!

Easy Tuna Casserole

This was extremely wonderful - my new comfort food! I made a few of the alterations other people suggested: 2 cans of tuna, frozen peas, one can cr. of chicken, one can cr. of mushroom, plus some garlic salt. I tasted it at that point, and found I was wanting a little bit of zing in it. So I added about 2/3 cup of mayo, and it turned out marvelous. I would recommend trying that for a bit of zip. I also omitted the onions since I didn't have any. But all said, this recipe is a great starting point, and probably would have been awesome if left alone too. I am pregnant, and think it's become one of my new cravings... (new addition: I love pickles with my tuna sandwiches, so I thought, why not? I threw in some dried dill weed, and it tastes marvelous!)
