Pesto Chicken Florentine

WOnderful! I made my own alfredo sauce simply because it is so easy to do. Be advised that pesto can be very strong tasting and a little often goes a long way. I usually add half the amount called for (in any recipe) and then increase bit by bit until it fits our tastes.

Beefy Upside Down Pizza Casserole

This was a big soggy mess. I am not sure what magic I expected to happen in the oven but it came out it was just as wet as when it went in. This is a meat sauce with croissant dough. And because it is so saucy going in, the dough bakes and then promptly absorbs liquid from the sauce to render it just as doughy as before it was baked. There is nothing casserole-y about this dish, as there is nothing to bind it together. Disappointing but after reading through the ingredients and directions, I should have suspected.

Garlic Chicken with Orzo Noodles

Nice basic recipe. Not a whole lot of flavor though. We had to doctor it with more salt, red pepper and garlic powder. I would recommend cooking the orzo in chicken stock. I also added tomatoes.

Ukrainian Red Borscht Soup

Wonderful! Perhaps next time I will dice some of the beets and puree some. The shredded beet texture was a little strange but the taste made up for it by leaps and bounds! I also added a few beef bouillon cubes to round out the flavor a bit.

Chicken Wing Dip

They weren't kidding when they said it tastes like hot wings! This is so good! Every time we make it, people ask for the recipe. We also used blue cheese instead of ranch. Outstanding!

Zucchini Pasta II

This is great! We eat this on a regular basis. The flavor is wonderful, the broth is a little fluid - I need to try and thicken it up a bit. But no one ever thinks it is anything but spectacular.

I also thought it was pretty bland as written. ANd a bit dry too. Next time I will add a bunch more spices and either reduce the pasta or double the sauce.

Mom's Zucchini Bread

Not a single modification here. And it was FABULOUS! We made this recipe 6 times in two days and handed out zucchini bread to everybody! It was a huge hit! Thanks for a terrific recipe!

N'Awlins Stuffed Bell Peppers

I used diced sausage instead of ham and cornbread stuffing. I also blanched my peppers prior to stuffing (incidentally, 20 minutes was too long - they split and were floppy). My family loved them, even with my mess-ups and substitutions. Great recipe!

Blueberry Cheesecake Ice Cream

It is funny to read the wide variety of reviews. Too sweet, too mild, not tart enough, too much crust, enough crust... I guess it is a matter of preference. This recipe has a great flavor. I love the idea of making my own blueberry sauce. And the cheesecake addition made the ice cream not overly sweet. Where I messed up, I think, is when I used 2% milk. The recipe is non-specific about the type of milk and I didn't think anything of it when I added our normal 2%. However, the ice cream was a bit ice milky and was NOT the texture I was going for. Still had great flavor though, don't get me wrong! Next time I make this (which will be soon because it is a good recipe) I will either use whole milk or half and half for the 2 cups milk called for, and hopefully it will be creamier.

Made just as instructed and got tremendous reviews! Everyone loved it. The second time around I [accidentally] added a couple/few more tablespoons of bourbon. It enhanced the flavor and made it even better!

Maple-Soy Glazed Salmon

Nice combination of flavors but I didn't think this added a whole lot of flavor to the fish. Perhaps if the salmon were marinated in it for a few hours, it would hold more taste. There is a recipe on here for a salmon marinade with brown sugar and soy sauce that we LOVE - I just didn't have time to let the fish soak, so I opted for a glaze, thinking it would work almost as well. I was wrong.
