Chicken Quesadillas
These quesadillas are delicious. I make them exactly as the recipe states except I omit the bacon bits ~ we're not fans of bacon. When we're done with dinner I always wish I had more for lunch the next day, as there are NEVER any left overs. Next time I'll have to remember to make a double recipe! Oh ~ It is only my husband, 3 year old daughter and I so I half the recipe as stated to accommodate our little family. Everyone loves it, even my daughter gobbles these quesadillas up! Yummy!!!

Banana Crumb Muffins
I served these as a dessert after our dinner tonight. They are absolutely wonderful. I followed the recipe exactly except I added a teaspoon of vanilla, 1 teaspoon cinnamon and 1/2 teaspoon of nutmeg. They made 12 big muffins. They are very moist. I did have to cook them for an additional 3-4 minutes to get the centers done. I didn't mash up my bananas first, I simply put them into the mixer whole and let it mix them up for me. I did use a spoon to mash up some of the bigger pieces, but the muffins ended up having banana chunks in them that were delicious! The crumb topping is a must! I will definitely be adding this to my own personal recipe book. Thanks Lisa!

White Chocolate Raspberry Cheesecake
I served this for our family Christmas dessert and it was wonderful. Everyone kept saying how delicious it was. I used Oreo cookies for the crust (including the creme filling). I did use a little less butter and a little less sugar in the crust. Instead of using frozen raspberries, I used raspberry jam and just mixed it right into the cream cheese mixture. That way it had the raspberry taste throughout the entire cheesecake. Very delicious!!! As others suggested, I wrapped the bottom of my springform pan with foil and then placed the pan in an inch of water on a jellyroll pan. As the water evaporates it keeps the cheesecake moist and helps it to not crack. After baking the cheesecake for an hour, I turned the oven off and let it sit in the closed oven for an additional hour. I then placed it in the refrigerator for 5 hours before presenting it to the table to eat. I also warmed up a little extra jam for guests to drizzle on their cheesecake. Absolutely delicious!
