Fantastic Black Bean Chili

This recipe is the closest to my Skillet Chili recipe I've seen. Here's how mine is different: Sautéed onion in Barefoot Cab (in lieu of red wine vinegar) with S&P. Added 2 T. garlic and 2.3 lbs. turkey and 2 t. Vegetable Better than Bouillon. When turkey was browned, I added 1 can fire-roasted tomatoes, 1 can tomato paste, 1.75 cans black beans, 2/3 can Ro-Tel. In addition to listed spices, I added cayenne to taste. Really tasty! Worth saving and repeating!

Polvorones de Canele (Cinnamon Cookies)

These are fabulous! I did increase the cinnamon in the dough a bit and eyed them instead of cooking them for a specific time (when they were slightly cracked on top, I called them done), and for what it's worth, I did toss them again very gently in cinnamon sugar once they had cooled a few minutes. I think these are excellent and will definitely make them again in the future! This recipe is a keeper!

Broiled Swordfish

This is my all-time favorite fish marinade. It is SO easy and absolutely scrumptious! It really enhances the flavor of the fish rather than overpowering. I could eat this a few times a week (with different types of fish) and not grow tired of it; it's that good!

Pumpkin French Toast Bake

This is a keeper! It can get a little too dry if you over cook, so be careful to watch it, but it was very yummy and froze nicely. I have prepared it and baked it immediately and also let it sit overnight in the fridge - both ways it was very good. I like that you can use a lot of different kinds of break with it as well - have mixed whatever I have on hand to make enough and it always tastes delicious! We do top it with syrup - it's not quite moist or sweet enough plain. I may play around with the moisture in the future, but as previously stated, it's very good!

Best Chocolate Chip Cookies

These are very good cookies. The quality of the ingredients will certainly impact the results, but these were definitely edible - ha! I made them for a small gathering and none made it back home. I made 1/2 w/ nuts and 1/2 without. Oh, there is definitely a fine line between done enough and overdone and it is wise to watch them carefully. Best ever? Tough to say, but certainly worth making again!

Pumpkin Fluff Dip

This was good, but nothing spectacular. However, I took it to a small gathering where I knew there would be people with gluten, dairy, and nut allergies - which limited my options significantly. Looking for an easy recipe that met this criteria, I served it with apple wedges, cinnamon graham crackers, and ginger snaps, and it seemed to be enjoyed quite a bit. We didn't manage to finish the leftovers, so it wasn't irresistible, but it worked well for my purpose!

Slow Cooker Mediterranean Stew

Eating this while it was still hot, I had mixed feelings; something just wasn't quite right. BUT, the thing that made this taste really wonderful was refrigerating it and then reheating. Reheated it was really delicious! I'll be making it again, for sure!

Chocolate Butterfinger-Caramel Cake

This is certainly a crowd-pleaser, but I was underwhelmed. I'm not a huge fan of cool whip and definitely prefer home made desserts, so maybe I shouldn't be surprised I only thought it was OK, but with the rave reviews, I kinda expected to love it in spite of the packaged ingredients. I may make it again to take somewhere, but I can't say I'd request it. My husband thought it was better after a couple of days in the refrigerator.
