Cinnamon Ice Cream

Very nice texture and flavour. I did change it a bit: I used soy cream instead of dairy, added some instant coffee and a couple of shakes of cayenne to go with some Mexican chocolate cupcakes. Delicious!

Brown Sugar Banana Nut Bread I

I made 24 mini muffins from this recipe (baked for 20 minutes each) and they turned out so wonderfully! I put a mix of dark brown sugar and cinnamon on the top for a bit of crackle, which was a nice touch. I also added 1 tsp cinnamon and 1/2 tsp ground mace to the batter. Soft, sweet and addictive.

Sweet Potato and Carrot Soup with Cardamom

Great soup with lots of flavour. I made a few changes out of necessity/preference: all homemade stock (no water) plus extra to make the soup thinner, ground cloves instead of cinnamon, no turmeric, about 1/4 tsp cumin seeds added, garlic added, and fresh ginger instead of ground. I served it over rice like a sauce and it was delicious!

Curried Chicken and Potatoes

Very tasty with a few adjustments. After reading reviews that said this was a bit bland, I doubled the spices (except the cayenne) and added diced onion and ginger with the garlic. Also, my husband has a dairy allergy and I couldn't find any soy yogurt so I used coconut milk instead... wonderful flavour!

Rich Italian Sausage and Potato Soup

Rave reviews from my husband! I only made a couple of changes. After reading reviews that the recipe was missing "something" I figured I'd throw in a tablespoon of fresh, snipped rosemary... a great addition! Also, since my husband is allergic to dairy I used soy cream, which worked fine. Definitely give this recipe a try!

Orange Oatmeal Muffins

I used 1 full cup of orange juice and heated it up in the microwave for 1 minute before soaking the oatmeal. Instead of raisins, I used 1 cup of frozen cranberries. And I topped the muffins with some sprinkled white sugar. These were amazing. Excellent flavour. Soft and moist. HIGHLY recommended.

Vegan Brownies

This was my first time purposely making something vegan. My husband is allergic to dairy but I've never tried baked goods without eggs. I was skeptical! Based on previous reviews, I avoided white sugar and instead used some amber agave syrup and an extra 1/4 cup of flour. I had some Earth Balance vegan margarine, about 1/2 cup, and then used 1/4 cup of oil as well. The agave syrup wasn't as sweet as I'm used to with sugar, but the brownies went over so well with the group and my vegan coworker was thrilled! I'll definitely be playing with the recipe some more!!

Dee's Roast Pork for Tacos

The first time I made this I didn't have any green chilies on hand so I thought I'd use the juice of 1 orange instead. The result was so delicious that we were really looking forward to the actual recipe. I just finished cooking it and it's rather disappointing compared. I'll keep making it with the orange juice instead! Also, I have to roast it about 1 hour longer and I add the juices from the pan to the shredded pork for added flavour.

Soft Christmas Cookies

I'll start by admitting I used shortening because my husband is allergic to dairy and I couldn't find our usual margarine that doesn't have whey powder in it. I've made a LOT of sugar cookies, mostly using a recipe that includes butter and sour cream... soft and delicious and easy to work with. This dough was impossible to work with. It crumbled when I rolled it or removed the cookie cutters. The cookies themselves are quite tasty, although not exactly soft. More like not crispy as long as you make them thick and underbake them. I'm going back to my old recipe and trying it with non-dairy sour cream.

Apple Avocado Salad with Tangerine Dressing

I used less lettuce and more apple and I candied pecans by toasting them with brown sugar and bourbon. I found the dressing rather sweet. Strangely, the blue cheese was completely drowned out by it. If I make it again I won't use any onion as I found it clashed with the rest of the flavours.

Honey Crystal Almonds

I think what really made these was putting a bit of sea salt in with the turbinado sugar before shaking them in. That bit of saltiness really brings out the flavours. Delicious!

Awesome Baked Sea Scallops

The scallops were perfect, tender and tasty. Next time I'll use less bread crumbs and less butter. I discovered after I made it that I didn't have a lemon, but I didn't miss it at all.

Soft Peanut Butter Cookies

Very soft, and they stay soft... at least the next day! I'm not sure how much longer they'll last after that. I used 3/4 cup peanut butter like other reviewers, real butter rather than margarine, and natural peanut butter. Hubby loved them too, and he's PICKY about cookies (can't be too dry or hard). Thanks for a great and easy recipe! Next time I'll add some unsalted peanuts and replace a bit of the flour with whole wheat.

African Sweet Potato and Peanut Soup

I made this recipe almost exactly as is, with the addition of one red bell pepper, 1/2 tsp of salt and an extra tablespoon of peanut butter. This smelled wonderful and maybe with some tweaking could taste that way too, but as is it is way too watery. Next time I will use only 2 cups of liquid and I will use chicken broth, and more cumin because I love that stuff. Unfortunately, I have to throw this batch away... hence the 3 stars.

Baked Sweet Potato Sticks

I make these all the time - my husband LOVES them and asks for them constantly. I vary the spices: cajun, Greek or even Moroccan. Once I served them with a mixture of mayonnaise and avocado mashed together and they were amazing together.

Golden Yam Brownies

Absolutely delicious and moist. I think anyone scared of sweet potatoes would love these. I used sweet potatoes (the yellow flesh ones) that I microwaved then mashed - next time I'll mash them better because they were a little overly lumpy. I think these would be great with pecans, or maybe butterscotch chips in them for variety. But as is, D-E-L-I-C-I-O-U-S!!!

Avocado Stuffed Yams

Amazing together! I microwaved the sweet potatoes, didn't use olive oil, green onions or cilantro and added a bit of minced garlic then broiled them for a minute to melt the cheese... so delicious. My husband has asked to have these lots more!!!

Buttermilk Oatmeal Muffins
