Yummy! Extra enchilda sauce is great, if you have it! It's also fantastic if you can grill the chicken rather than boil it ad if you grill the tortillas a bit to make them sightly crisp just before filling them

Cheesy Baked Salmon

This was great!! We didn't have green onions so I cut up some yellow onions instead and I substituted some lemon juice for the cheddar cheese.... it was yummy! The kids even went back for seconds! :-)

Baked Potato Soup

This is a little spicy - and so good! Since the soup was a more watery than we would have liked, we mixed the cheese and bacon into the soup and then topped it with a little more cheese and the parsley (we didn't have fresh parsley so we used dried and it was still yummy). Since the potatoes were pretty chunky, we mashed them a bit with a potato masher. Other than that, we followed the recipe exactly. We'll always double this recipe ... we can't wait to have it for lunch tomorrow. Even the kids loved it! :-)

Terrific Turkey Meat Loaf

Yummy!! We all loved this! Next time, I need to be sure to cup the onions and peppers in small bits so it's not so chunky. Top with ketchup for last 5-10 minutes of baking for extra flavor and moisture.

Sun-Dried Tomato Cedar Plank Salmon

Pat Hawley made this for Memorial Day 2008 and it was absolutely scrumptious! Leftovers the next day were equally delicious! Awesome - and tastes gourmet! Perfect for company!

Sticky Monkey Brains

Yummy! Awesome with eggs and coffee/tea. One large tube of biscuits equally the 4 serving size. By this recipe's standards, a serving size is very large. We made it it a large (white) quiche/flan dish and it worked perfectly. We cut each biscuit into 6 pieces and each piece was perfectly covered in cinnamon and sugar. The only problem... once the pan is inverted, all the pecans fall off. Next time we'll try not inverting the pan or putting the pecans on the bottom of the dish prior to adding the biscuits.

Ma's Premium Ice Cream Pie

I used vanilla ice cream on the bottom and chocolate on the top layer with hot fudge sauce and crushed Oreos in the middle... yum! Everyone loved this recipe - adults and children! A couple of alterations were needed: 1) It takes longer than 15 minutes to freeze each layer - probably at least 30 minutes. 2) Be sure the 1st layer of ice cream is extra soft, but not liquidy, so that the crust doesn't break apart and stick to the ice cream. 3) Don't use too much not fudge, or it over takes the pie. This is very easy - a definite keeper!
