Peruvian Lomo Saltado

Wow, this was absolutely delicious! Imperative that the meat is marinated in the vinegar/soy sauce for at least a half an hour. Like others, I added cumin, garlic and subbed cilantro for the parsley. I used Ore Ida steak fries to much success! I did turn up the heat to almost a broil for an extra 4 minutes at the end to make them extra crispy. Make yourself a pisco sour, and try this recipe, it's a must!

Spicy Shrimp Creole

I was craving a spicy shrimp dish and this really hit the spot. I did get a little crazy with the recipe and once it was served over rice it was more like gumbo. I added a diced bell pepper, more garlic, sliced andouille sausage (reduced shrimp to 1 lb), and a can of black eyed peas I had on hand. I also added a splash of sherry vinegar which really helped brighten the tomato flavor. With a glass of pinot gris and a few hefty slabs of cornbread, this was one delicious meal. Will make again and again.

Caldo Verde (Portuguese Green Soup)

I set my expectations too high on this, even though I should have known it wouldn't be very flavorful due to the small list of ingredients. Even after adding more garlic, tbl. of smoked Spanish paprika and red pepper flakes it still was pretty bland. Once on the table, and everyone added extra salt it tasted much better. I think it's just one of those soups that requires a lot of salt. Using chicken broth next broth would surely alleviate that problem. Otherwise, it was a nice, sturdy and filling dish that was enjoyed with a warm loaf of bread.

Banana Pancakes I

These are some amazing pancakes! I substitued 1/4 of the flour with spelt flour for added nutrients and for a nutty flavor. Also added vanilla and a few dashes of cinnamon. They cooked up wonderfully!

Curried Quinoa Salad with Mango

This was very good and healthy too! I added blanched snap peas (cut in half), dash of tumeric and some fresh lemon juice to brighten the dish! I bet it would be good with garbanzo beans too for more protein and a different texture.

Famous Japanese Restaurant-Style Salad Dressing

This a very one-dimensional dressing as is and the consistency was a little too watery (and this is w/o adding the water). But once I added a few tbls. of sesame oil, tbl. of siracha (hot chili sauce) and a 1/4 cup of mayo, it was much, much better. Poured it over crisp iceberg lettuce, sliced tomatoes and mung beans. Next time I'll add some slice mushrooms to the salad mix. Great accompaniment to any sort of Japanese food, from tempura to grilled flank steak to homemade sushi.

Mall Pretzels

These were quite the hit at my Oktoberfest party. I found the dough very easy to work with (got a good arm workout with the 8 min. kneeding!). Three important things to make these really spectacular: serve them hot, add lots of coarse salt, and always serve with a good mustard or two. Prost!

Pumpkin Coconut Curry

Couldn't believe the recipe didn't actually call for curry...Not sure if that was a mistake or not. But I added 1 tbl. of curry and only put in 2 tsps.of cumin. I used the whole can of coconut milk just because I love it so. I also added long beans (chinese green beans) cut in 1/2 pieces. It came out fantastic, esp. over jasmine rice. A wonderful fall recipe!

Macadamia Nut Crusted Mahi Mahi

A very rich and satisfying dish with a tropical flair. Only thing I changed was I subbed Panko breadcrumbs for regular b.c. and added a few dashes of red pepper to spice it up. So delish!

Ahi Poke Basic

Oh so yummy! I used fresh wasabi paste instead of the crushed red pepper for heat and also added diced avocado to make the poke even more silky and rich.

Moroccan Lentil Soup

Found this to be very delicious and healthy too. I substiuted chicken broth for half of the water. Used about a teaspoon of Harrisa spice to further up the complexity of the flavor. I also added a 10 oz package of frozen sweet potatoes which added the element of a new texture and a new color.

Chicken Tortilla Soup III

Had a satisfying taste to it yet a few changes gave it a needed kick. Like others, I halved the amount of half n half and put just a cup of 2% milk in. I added a can of black beans and a can of Rotel (diced tomatoes and grn. peppers). I also added a tbl. of corn starch to give it a more stew-like consistency. To save some time, I used a rotisserie cooked chicken from the store- delicious!

Kielbasa Pasta Casserole

Summer Corn Salad

I would suggest swapping red wine vinegar for the white, it brings out the flavors better. Decided to crumble some goat cheese on it too and it really made this recipe sing. And, as always, don't skimp on the fresh basil!

Chocolate Martini a la Laren

It's a good start... but once using vanilla vodka and the last few drops of some Baileys I had, it was magnificent to say the least! Without the Baileys, a dash of cream helped too.

Key Lime Pie

Pretty good- but for a few easier changes, just use vanilla vodka, it is a lot smoother than regular vodka with the added vanilla extract. I also added a tablespoon of half n half for an ultimate smooth key lime taste!

Chicken Enchiladas II

This recipe never fails. I added a can of creamed corn to the chicken mixture as well as a tsp. of cayenne pepper for extra hotness....so yummy. I often use store bought rotissere chicken that makes shredding it very easy.

Chinese Napa Cabbage Salad

Peanut Noodles

The recipe alone fairs okay but with some added fresh garlic, julienned carrots and cucumbers and 2 more teaspoons of sugar it really packed a punch! Much more peferable cold.
