Cornbread - Healthy!

I made it with reduced-fat sour cream instead of the yogurt. Baked it in a cast iron skillet. Delicious! Even my husband liked it and he's not on a diet.

Mexican Rice I

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

I was a little nervous making something that had no reviews yet, but this was delicious! It looked gorgeous in presentation, and I loved all the different flavors. The recipe doesn't give instructions for cooking the pork chops so I had to wing it. I coated them with a little olive oil and a combination of salt, pepper, and chili powder. Let them sit for awhile to absorb the flavors, then put them on the stovetop in a grill pan over medium heat. I covered the pan with aluminum foil and cooked for 10 mins (flipping once halfway through). Internal temp ~145. I removed from heat and let them sit awhile more to finish cooking, then sliced. They turned out perfect.

Almond Crusted Chicken with Tomato Citrus Sauce

The almond crusting on the chicken is amazing!! I will definitley save that part to make again. I doubled the curry, tumeric and cumin. The citrus sauce was just ok.

The recipe is probably great if you follow the directions. It is very important to use low-sodium soy sauce like it states. I had regular soy sauce on hand, and the only miso paste I found in the store had added sea salt (I don't know if this is typical). The result was so salty that I couldn't finish it. It was even too much for my boyfriend, who puts salt on everything.
