Country Apple Dumplings

Oh my goodness! This is so delicious- I do not even want to look at the calories! I used gala apples (my fav), so I cut the butter by 1/2 cup & cut the butter by 6 tbsp. Also added a splash of vanilla to the butter/sugar sauce---HEAVEN!

Pesto Tuna Salad with Sun-Dried Tomatoes

What a great twist on the traditional tuna salad! But, USE YOUR OWN JUDGEMENT! Add pesto, mayo, & parm to taste! (Some like more mayo, pesto, etc.) Overall, fabulous use of ingredients I already had on hand.

Donut Muffins

Do I even have to say how amazing these muffins are? 4 stars simply b/c you MUST REDUCE THE NUTMEG! 3/4 tsp is OVERKILL. 1/4 tsp for 24 muffins is PLENTY. And also: make sure melted butter is piping hot so the cinnamon sugar adheres and does not get "chunky". One of the best recipes I've found- so simply, easy, & delicious!

Pesto Cheesy Chicken Rolls

Absolutely wonderful! Such a simple recipe, yet outstanding flavor! The only changes I made were to marinade the chicken in Italian dressing & broiled the "rolls" the last 5 min of cooking after brushing the tops w/ egg wash, panko bread crumbs & mozzarella. My changes were simply for personal preference and appearance- w/o the changes it's still a great recipe!

Mouth-Watering Stuffed Mushrooms

These mushrooms truly are mouth-watering! The cream cheese mixture had just the right amount of spice and flavor without overpowering the mushrooms. Tip: I served these as an appetizer for a dinner party & used small-medium sized mushrooms. They were small enough to pop in your mouth and the size prevented them from oozing all over the place (which makes them harder to serve). Thanks for the fantastic recipe!

Shrimp Scampi Bake

OUTSTANDING! This recipe is truly phenomenal; it is one of the 1st recipes I ever made on AR & I've been using it ever since. The only changes I made were due to personal preference: reduce amount of butter (usually use 1.5lbs of shrimp), boil raw shrimp in old bay & water (toss em in at the end) & added some Italian seasoning. I really feel the KEY to this recipe is the mustard you use. I use a gourmet mustard sold at the local spice shop & it really makes all the difference in the dish. WONDERFUL!

Grilled Brown Sugar Pork Chops

I wish I could give this one more stars! As is it is about a 3, but with modifications, about a 4.5! Rave reviews from my family. I seasoned my chops with garlic & onion powder, salt, pepper, & marinated overnight in 1/2 c apple juice & 1-2tbsp soy sauce. I followed others' advice to reduce the oil to 1tbsp, sugar to 1/4 cup & added 1 tbsp cider vinegar. After tasting, I felt it tasted to "soy saucey," so I added a bit more sugar to taste. Grilled and brushed with sauce in last few min of grilling. OUTSTANDING! Definitely a keeper & is a recipe that can be modified to taste.

Shrimp Lemon Pepper Linguini

HORRIBLE! I am so sorry, but this recipe is TERRIBLE, and I hate so much to do this, but here it goes. First of all: WAAAYYYYY too much lemon (I used fresh, of course, but too over-powering for the shrimp), TOOO MUCH GARLIC!!!!!!!!!! (please SAVE your precious shrimp). I LOOOOVVEEE garlic, but WOOOOWWWWWWW, too much, I do NOT like eating garlic by the spoonful, do you?? This is way SOOO disappointing (I LOVE LEMON PEPPER). By the way: doubled the sauce, used fresh herbs, & used premium shrimp.

Asian Lettuce Wraps

As is 4 stars... with modifications- 10 stars! No need to ever brown beef in oil, but added 1 minced onion w/ a little garlic. Made sauce how others have (2 tbsp soy, 2 tbsp rice wine vinegar, 1 tbsp chili garlic sauce, 1-2 tsp sesame oil & 2 tbsp hoisin) MAKE SURE TO ADD THE HOISIN..holds the majority of the flavor. Added bamboo shoots & sauteed mushrooms, as well. With modifications it was phenomenal! I ate it w/o the lettuce! I know make bi-weekly!

Tomato Chicken Parmesan

This was very good...cheaper and better than something like Olive Garden. I seasoned plain breadcrumbs w italian seasonings, garlic & fresh parmesan cheese,used mozzerella on top & made my own pasta sauce- homemade pasta sauce is key to any great italian dish on this site!So easy: 1 can italian tomato sauce, 1 can paste w/garlic & 1 can italian diced tomatoes-- makes the dish!
