Tofu Parmigiana

I make this a lot for our vegetarian family (including 2 teenagers). I top it with a lasagne-like ricotta topping (ricotta mixed with egg, salt and some herbs). I serve it with a side of angel hair pasta, sauteed in garlic and grapeseed oil.

This apple sauce recipe is so perfect, I make it in big batches and can it. I throw in a little lemon juice as well.

Crumpets

I've made these many times, and they are beyond delicious. BUT I always have a messy time flipping them out of the rings, onto the other side. I've tried everything, from slapping copious amounts of butter on the rings, spraying them, to not using them at all (fail). Oh well - they don't look nice, but they taste so wonderful.

I'm not big on "quick" breads but this is the exception. And my friends have asked for the recipe. Not overly sweet, moist and perfect with your afternoon cup of tea.

Homemade Black Bean Veggie Burgers

These are excellent - I've made them exactly as is, many times. I usually double it and freeze half of them. They thaw and heat up well in the mircrowave.

Playgroup Granola Bars

I make this as is, but I put half of the mixture down into the pan, cover it wih jam and dried fruit (usually cranberries), then slap the rest of the mixture on top. I don't add any raisins. But I add about a 1/4 cup of unsweetened shredded coconut. we love it.

I think this is superior to the standard cocktail sauce. I always add a little more lemon juice, and one clove of garlic, minced.

Spiced Pumpkin Seeds

This is a better way to add some "oomph" to roasted pumpkin seeds. I used whatever seeds I had on hand (delicata, buttenut). I melted the butter, then mixed in the balsamic, salt, and garlic granules. Then tossed it all together with the seeds before spreading them out on an aluminium-lined (sprayed) cookie tray. Cooked them for the requisite time, and 'voila' - they were perfect!

Mouth-Watering Stuffed Mushrooms

I miss breadcrumbs in my stuffed mushrooms, but this recipe was a good alternative for the "low-carb" community. My husband wolfed them dow, as I did - it's a keeper. Thanks for posting.

Whole Wheat Beer Bread

I've made a few different beer breads, and this was the first one that didn't taste overwhelmingly like beer (I used a can of Coors Light). I also switched the all-purpose flour to bread flour. It rose really high, was wonderful, even the next day, as is. I haven't read any reviews here so forgive me if what I have said, is just a "repeat".

Hungarian Mushroom Soup

I made this after eating a version of it via my Hungarian in-laws. When they tasted this one, they were extremely pleased. It's delectable, and has done wonders in bridging a cultural gap here.

Brown Family's Favorite Pumpkin Pie

I'd never made, tasted pumpkin pie until I moved to this country. I went by the reviews and made this one, and it's simply superb. And it couldn't be easier to make. Throw a few things together, throw it in the oven and you're done.

Make Ahead French Toast

Without a doubt, the most looked-forward to Christmas breakfast dish. I've made it for three different gatherings, and everybody has loved it. I told one guest how to change it for a low-fat version, and she objected, saying 'don't mess with perfection!'
