Pesto Tuna Salad with Sun-Dried Tomatoes

Not bad, but I'm a first time pesto and sun dried tomato user. The fishy taste from the tuna is gone, that's a plus. It is quite interesting. I had it with triscuits. I'd probably make it again.

Mexican Shepherd's Pie

Excellent! This is what I changed and it still turned out great. I added 1 can of refried beans after I added the taco seasoning & water. I made up 2 boxes of Jiffy corn muffin mix instead of 1 and I put the black olives under the corn. I had a nice corn muffin top. It was very good! 2 of us ate 1/2 of the 9X13 pan (oink oink!)

Irish Chicken and Dumplings

Very tasty! I used refrigerated biscuits and 1 cup of chicken broth in place of 1 cup of water. Would have been nicer to have the "gravy" thicker. Next time maybe I'll thicken it.

Burrito Pie

YUM! I cut the recipe in 1/2 and put it in a 9x13 cake pan, worked great, had 2 layers of tortillas. I've made a similar version before in a crockpot, but this beats that hands down. I can't wait to make this for my nieces husband who is from Honduras (he loves Mexican food!). Thank you! It's a keeper!

Amish Casserole

I wasn't too impressed with this. I followed the recipe exactly and it was dry. The flavor would have been better if it was moister. Can't think of any way to improve it, maybe add more soup?

Whole Wheat Banana Nut Bread

Excellent! I accidentally baked it at 375 for the hour instead of 325 (oops!). But, it was not dry, it had excellent flavor and just the edges were too done. The flavor is awesome, the whole wheat flour gives it a nutty texture & taste. I also used 1/4 cup honey/1/4 cup Splenda and it was great. Thank you!

Roasted Garlic Cauliflower

This was pretty good. Mine didn't turn out with as much garlic flavor as I expected. I would make it again, just need to figure out what other spices I can add to it to make it more flavorful.

Amazing Pork Tenderloin in the Slow Cooker

This recipe is awesome! My husband and I ate the whole tenderloin by ourselves! The flavor is excellent, it is sooooo tender. I will be making this regularly. Thank you!

Mmmmmmmm....good! A lifesaver - I'm a sweet eater and since being on SB, I've curbed that, but this is great because ice cream is my favorite, makes me feel like I'm cheating.

Sesame Raisin Cookies

This recipe is really quite good! I added 6 packets of Splenda for a little more sweetness. I can't eat eggs so it's nice to have discovered this. A very healthy cookie! Thank you.

Eggless Tofu Spinach Quiche

I'm allergic to eggs so was happy to find this one. It is wonderful! A non-tofu eater would never know they weren't eating eggs! I used 16 oz extra firm tofu, more milk had to be added and I put in a little too much salt. But, I now have a new breakfast! Thank You!
