My favorite things to cook
I enjoy cooking all types of foods. I have done some catering for various scrapbooking parties I participate in. Many of my recipes come from this site. I love doing research and then tweeking them to my own personal taste.
My favorite family cooking traditions
I have tried to keep my Norwegian Heritage going for my family. I make a lot of tradional foods from when I grew up. The only Norwegian I don't do unless I'm with extended family is cooking Lutefisk which is basically a type of cod. It is one food that is an aquired taste.
My cooking triumphs
I made my first quiche not to long ago. Have to say, I've always loved quiche, but never have made it myself. Didn't know how easy they are to make. The recipe I used I found on this site.
My cooking tragedies
There have been a few. The one that comes to mind was when I was cooking for a "Guess Who's Coming to Dinner" party at our house. I had made a cheesecake the night before and it spilled over into the oven. Well I didn't take the time to clean it well, so when my husband went to cook the roast beef for dinner, the entire house filled with smoke. It was in the middle of winter, so there we are with the doors open trying to get the smoke out and still cook the meal. Not sure who was coming for the dinner, made it all that much worse. But thankfully it was people we knew well and we had a great laugh over it.

Italian Cream Soda
Love Italian sodas! I used this recipe as a base but with different flavors. I have used milk as I don't always have cream handy and I add a bit more than this recipe calls for. For those having problems with curdling, I read somewhere that if you put the syrup in the glass first, then the milk/cream, stir. Then add the ice and finally the carbonated/soda water. Not sure if that works all the time, but it does for me. :)

Pizza Casserole
Loved this recipe. Did make some minor adjustments. Did not add green pepper as my son doesn't like them and we added more cheese. Added some to the mixture and the rest on top. But other than that....it is a very good satisfying recipe. I make-up my own pizza sauce by using Newman's Own Marinara Sauce and some tomato paste. I also add fresh oregino and basil to the sauce in season. THANK YOU for sharing a great recipe!

Mom's Stovetop Pork Ribs
My family LOVED these ribs. I made the recipe as listed. I have to agree with some of the other reviews in that it was a bit too salty. I will for sure make again, but I'm going to try it with low sodium soy sauce. Putting lime juice on the ribs after cooking did help cut down the salty taste however. But still over all...easy to make and wonderful to eat! Thanks THELMALU99 for sharing your mom's recipe!
