Quick Pickled Jalapeno Rings

This recipe couldn't be easier. Based on another reviewer's suggestion, I use only 1 tablespoon of sugar in order to keep more of the spice. They turn out tangy, spicy and delicious - way better than store-bought jalapenos! Just a note that the garlic reacts with the vinegar and turns an ugly blue, so if you see something that looks like mold, don't worry!

French Onion Soup VII

Homemade Flour Tortillas

Delicious and easy! I used shortening and warm water, as others suggested. The tortillas were deliciously soft and wonderful. I even used a normal nonstick frying pan (because I don't have a skillet), and it worked great. Thanks for the recipe!

Easy Biscuits

Mine came out quite a bit flatter than the picture and tasted sort of "healthy." Perhaps it was because as 1 reviewer noted, I did not have perfectly fresh self-rising flour. Instead, I followed another reviewer's suggestion and made my own "self-rise" flour by adding baking soda & powder. Disappointing.

Love the Mama Lemon Bars

As my spouse said upon eating one, "You couldn't ask for more from a lemon bar." Delicious and generally perfect! Tweaks: I used a 9x9 pan, which was the perfect size for this recipe, and I baked the lemon part only 20 minutes.

Tomato, Cucumber and Red Onion Salad with Mint

Delicious! I left out the oil and reduced the sugar slightly (to 2 tsp). I got to use loads of mint from my garden. Delicious and fresh!

Classic Peanut Butter Cookies

The cookies came out pretty soft with a nice shape & consistency. They were less sweet than I'd like and a bit less flavorful. I followed the modifications Denielle2 suggested with additional PB & flour, as well as changing the cooking temp & time.

Chewy Macaroons

These get lots of points for being easy! I used about 1/4 less coconut and reduced the other ingredients accordingly. I added some flour to thicken and help with stickiness (to avoid falling apart). I also added chocolate chips to one batch - yum! My major complaint is that they taste pretty oily, and the flavor is not quite ideal... But with a few tweaks, a great recipe.

Pan Fried Daikon Cake

Very tasty and pretty easy to make! I used much less oil - enough to cover the bottom of the pan (maybe 1/4 inch worth) and green onions instead of red. They turned out great. Also, I skipped the step of salting and draining the daikon because I had grated mine the day before and let it sit in the fridge overnight.

Black Bean Cigars

I was skeptical at first (being used to authentic Mexican food), but these were really delicious! We used habanero cheddar cheese to spice things up and also included 4 tablespoons of Tapatio hot sauce instead of"picante sauce".

These were fantastic! They came out perfect on the first try. I didn't change a thing. I pressed the dough balls down a bit with my fingers before baking them, and I baked them exactly 8 minutes. They came out just right.

Quick and Easy Stuffed Peppers

I love these! They are so easy and tasty and always a hit. I roast the peppers in the toaster oven instead of the microwave. I also use white rice instead of brown (just because that's what I always have around), and I use spicy salsa instead of tomatoes. It's great!

Spicy Indian Dahl

This was tasty, but it was not very spicy and it also seemed to be missing some key flavors that I usually expect from Dahl. I would compare this more to a lentil soup than a traditional Dahl. Still quite tasty though.

Homesteader Cornbread

What I liked about this recipe: It's super quick and easy! It made a nice, dense cornbread and came out well the first time. I added 3 sliced jalapeños, and it turned out great. What I did not like as much: the flavor did not taste very "corny" to me. Maybe I'd add more cornmeal or some corn to the mix in the future.
