Healthier Ultimate Twice Baked Potatoes

Roasted Vegetables

Love this! There are so many variations available too but even as the recipe is written it's great! Very hearty but healthy at the same time. It's a wonderful way to use up some extra veggies I have around the house.

Creamy Rice Pudding

I had never made rice pudding before and found this pretty easy. I did temper the egg mixture with some of the hot pudding to make sure the eggs didn't scramble. I also used long grain rice but would maybe switch to a shorter grain next time because I prefer it cold, it seemed more dense with the long grain. I also added cinnamon and nutmeg to the pudding instead of just sprinkling it on top. I omitted the raisins just because I didn't have any. My husband and I ate it all within 24 hours!

Stuffed Green Peppers I

We loved it! I made a few changes mainly trimming it down for only two people but I also added some pork sausage to the beef and some Tobasco to the mixture while it was simmering. I think next time I would add something spicier to the mix like jalapenos. It went great with some roasted potatoes to soak up the extra juices!

Chocolate Chip Meringue Drops

This was my first time ever making meringue and they turned out better than I was expecting. I also made two dozen larger ones rather than 40 smaller portions with no adjustment to the time. They have a really nice flavor but I'm not sure about the texture yet. I have never had them before so it might be something I grow to love.

Candied Carrots

I had previously made a candied carrots recipe that used more of a caramel sauce made of just butter and brown sugar. It was a little too sweet for my taste so I was a little leery of trying this one. However, I'm glad I did! The salt and pepper made a huge improvement and the sauce wasn't so thick and sugary. I will definitely be making this again and maybe tweak it by adding some additional spices to see what that does.

Easy Shake and Bake Chicken

I used boneless skinless chicken breasts and the 40 minute cooking time was just a little too much. I also used a small amount of olive oil instead of butter on the bottom of the cooking dish. The flavor was excellent and it was a quick way to make some yummy chicken. The only thing I would change next time would be to decrease the cooking time.
