Pumpkin Cookies VI

I'm giving this 2 stars only because they tasted delicious. The problem I had was that mine never rose. I even tested my baking soda after the fact to see if that was the problem, but it still had plenty of potency. Seems that there should be something acidic in the recipe to help the soda to react, but no one else mentioned this... I followed the recipe exactly so not sure why it didn't turn out. I also had a lot of trouble removing them from the pan so after the firt batch I gressed the pan with slightly better results.

Fresh Vegetable Stir-Fry with Peppery Orange Beef

This is a yummy recipe, but I give it a 3 because it is somewhat confusing. If I wasn't already comfortable in the kitchen I'd be completely overwhelmed. Seems like there are a lot of estimations - not sure why you'd need so much butter, and cooking the meat for 10 min is way too long. However, the flavors in the sauce are amazing, and I like that it doesn't get too thick. Yummy recipe - just needs to be more exact.

Gobble Up Granola Snacks

These really are delicious. Soooo much better than store bought granola bars. I subbed honey for the corn syrup, added raisins and cashews, and a tbsp of vanilla. Really delicious.

Raspberry Peach Crumble

The crumble part of the recipe was really tasty! I loved the vanilla in it. I cut the salt in half, but it still tasted salty to me. Also, I think I would cut the butter down, too. It was extremely rich. Other than that, a good recipe.

Easy Broccoli Quiche

This quiche tasted delicious. My picky 3 year old had seconds and is now asking that we make more! I agree that a deep dish pie crust is needed. Also, I had to bake it for 45 min for it to set. My biggest problem was that it was very soggy. Taste was great, but I've got to figure out how to dry it out a little!

Dutch Apple Pie

I was suprised at how good this was considering the simplicity of the ingredients. Since I didn't have any parchment I didn't use any and it turned out fine, although I had to loosely cover it with foil about half way through. I'll definately try it again.

Pumpkin Spice Muffins

These muffins were too spicy and not sweet enough, and I'm not someone who has to have things sweet. The texture of mine turned out really well, so I gave it 2 points for that. My husband was shocked at the taste (not in a good way), but I didn't prepare him for the health factor. My 3-year-old ate 2 the first day, but the next day just nibbled at it. I ended up eating the rest, but had to use honey-butter to make them palatable! Don't think I'll try this one again.

Beef Stew VI

This stew was 5-star in a comfort-food sort of way. It was just like a recipe my mom used when I was a kid. I took the advice of some reviews and coated my meat in flour to brown, but I don't think this was necessary. I didn't add the corn starch at the end because it had already become very thick -- I had to add water twice to keep it from burning, and I had it covered! Next time I'll stick with the recipe as written.

Cheese Garlic Biscuits II

These tasted delicious, but the texture didn't come out at all. I jokingly called them cheese pancakes because they were so flat. I was amazed that they stuck to the pan, since they sizzled in pools of butter while they were in the oven. Not sure if I did something wrong or if they were meant to turn out this way. Maybe I'll give them another try to see if I made a mistake...

Mimi's Slumgullion

Yum, yum! This is a simple, tasty recipe. My family has enjoyed it twice now. I would suggest leaving out the salt and pepper -- the sausage gives it plenty of salt and seasonings. I also like my peppers to be a little less mushy than the recipe calls for cooking them, so I go along with the advice to add them just before the sausage.

To Die For Blueberry Muffins

These were yummy. The crumb topping was really great, and the advice to fill the muffin cups all the way made for beautiful-looking muffin tops. I followed the advice of other reviewers and halved the topping, as well as adding cinnamon and vanilla to the muffins. My only complaint is that the muffins were slightly dry. I'll try them again soon to see if it was my oven or too long cooking time. My guests all raved.

Chinky's Mango Bread

This was really good. Different, though, and because of that I doubt I'll make it often, so it earns 4 stars. I made it in one 9x4.5 loaf pan and 9 muffins; I could have filled the loaf a little more as well as each muffin, and would have probably had only 6 muffins. It is very moist and even almost gooey, but not in a doughy sort of way. I did cut the sugar down to only 1 cup, and substituted cranberries for the raisins. I definately recommend trying this at least once!

Glazed Meatloaf I

I give this a 3 meaning we "liked it", but didn't find it to be something to add to the regular meal rotation. I have to admit, I found out *after* making and serving it that hubby isn't a meatloaf kind of guy (!) so that may have an effect on my opinion. I made it exactly as the recipe directed, and it was flavorful and had decent texture. The glaze was a bit too ketchupy for my taste, though.

Baked Basil Fries

This sounded great, but I had trouble with the consistancy. I couldn't get the cheese to stay on the fries, and turning them made it come off even more. They tasted great, and even the bits of cheese that baked on their own were good, so this gets 4 stars.

Slow Cooker Italian Beef

This was really good. Even better with crusty rolls that have been toasted and brushed with olive oil. Then load on the meat and cover with mozzarella cheese and broil for a couple of minutes. My husband raved! We also topped ours with roasted red peppers and mild banana peppers. Yum! Warning: this makes a LOT of meat. I used only 3.5 pounds, fed 5 people the first time, made leftovers for 3 tonight and have at least 6 more servings in the freezer.

Ultimate Potato Soup

I served this recipe to 16 guests in my home last night. I got great responses, although I myself felt that it is a bit heavy; you could rename it "mashed potato soup", since it is basically a white sauce with broth, potatoes and veggies added. It's good, though! I altered it only by substituting the half and half with evaporated milk and water. The bullion cubes really make the flavor nice.

Peanut Butter Pie VII

This pie is absolutely delicious. I make it every Thanksgiving and Christmas. My husband won't let either holiday pass without one, and guests always rave! It's more work than some of the others listed on this site, but the outcome is worth it.
