Blueberry Cream Cheese Muffins

These were awesome! Wonderful! My husband says they're the best ever. Only changes (1) used vegetable oil instead of olive - I know olive is healthier, but it leaves an odd taste in muffins, (2) used whey instead of buttermilk, not because it's better but because I had lots of whey around that needed to be used!, (3) this made 3 dozen, not 1 dozen. Yum! Thanks!

Quick n Easy Potta Beans

Excellent! I reduced the beef and this time also added a bunch of chopped fresh green beans for veggies and to stretch it, and it was an amazing combo. Oh, and I also use regular canned minestrone from a healthier brand rather than the condensed Campbell's stuff, which is full of scary food additives. Definitely a keeper here!!

Never Fail Applesauce Spice Cake

This recipe is WONDERFUL!!!! I made it for a birthday, and it was a huge success. Moist, flavorful, great texture, the works. This is going in my forever-file. My only changes - I took it out somewhere around 42 minutes instead of 50, and since I had to omit the nuts, I added 1 T. of butter of the frosting to make up for the lack of the butter pecans. Great job - thank you!!

Peanut Butter Pie XV

Simply wonderful. An awesome dessert - highly recommended. Very easy to make. This makes enough for two moderately filled pies or one very-very-filled pie with leftovers (yum). My two simplifications: - Instead of a food processor, I used a blender - I just added ingredients (with the hot cream) and blended; I didn't find it necessary to drizzle hot liquid in while it was running. - With whipped cream, I didn't find it necessary to add sugar slowly. I just added all sugar at the beginning and whipped. Thanks so much! Will be making again!!

General Robert E. Lee Cake II

Best cake ever. Enough said. But to elaborate: The recipe is wonderful; the only change I made was to add more zest than was called for in all parts of the cake. I might try to convert this to a sheet cake for more common every-day use, but it was superb. Received rave reviews from my parents and my family, and I loved it. Thanks so much!!!

Mozechilli Casserole

I never thought I'd like such a simple recipe, but this was great! It is also a good base recipe to start with and then customize. This time I halved the meat and added an onion, used Colby-Jack cheese (all I had), and reduced the amount of rotini a bit. Next time I would add olives and mushrooms. This has endless possibilities! Thanks!

Best Cream Of Broccoli Soup

We loved this! My changes: More celery, didn't puree (just mashed with potato masher), added potato flakes to thicken, and added some cheddar cheese. Simply delicious! One note - I did add a pinch of nutmeg like one reviewer suggested, and we did not like that, so I wouldn't recommend that. Definitely a keeper!

Potluck Chicken Casserole

This was terrific!! I had to make a bunch of tiny changes due to what I had on hand, but we both loved it and it is a definite keeper - easy to make, too! I doubled the sauce due to some reviewers saying it was dry, and that was a bit much - I think next time I'll just do a 1 1/2 recipe. Lovely!!

Slow Cooker Homemade Beans

Terrific!! Do make sure to cook the beans first. I add beans and 8 cups of water to a slow cooker and cook for 8 hours or until soft, then add the other ingredients (minus the extra water). I tried the stated method one time, and the beans never really softened. Other changes: reduced sugar to 1/3 cup, omitted salt, reduced bacon. My new standard recipe for baked beans!!

Zippy Beef Bake

I loved this! I was so glad to find an easy recipe for a casserole that didn't have cream of mushroom soup in it. I made a few minor changes due to not having some things on hand (cheddar instead of Monterey Jack, white onion instead of green, yogurt instead of sour cream), but nothing major. Definitely going into the regulars!

Absolutely wonderful! My new standard. I added 1 tsp. of lemon extract. If I was going to serve these unfrosted, I would probably increase the sugar as suggested by another reviewer.

Chicken and Corn Chili

Wonderful!! Made it a budget meal by adding just one chicken breast, and it was wonderful. Omitted salt and also used home-made beans and frozen corn to drop the salt content (which is already considerable from the salsa).

Lemon Cream Cupcakes

These cupcakes are absolutely SUPERB. I highly recommend them!! They are my new standard for lemon cupcakes. My only changes: I added tons more lemon peel (I do that with all lemon recipes) and made about 150% of the frosting recipe.

Not Red Spaghetti Sauce

In a word, delicious! Here are the alterations I made: - Can use less sausage (I used 1 lb.) - Doubled mushrooms - Added 1 cup chicken stock (adds moisture, eliminates need for bouillon with all of its sodium, MSG and additives) - Omitted bouillon - Added fresh garlic Yum!!
