Balsamic Salad dressing

This was so great! Thanks for posting the recipe. I happened to have all the ingredients on hand. It went together so fast and was soooo good. Considering there is zero fat in this dressing, the flavor and texture is really great.

Ultimate Roast Beef Blues Sandwich

Wow, the flavors in this sandwich worked so well together. I used sandwich buns rather than sub buns and toasted them for a minute. Then I spread them with a horseradish mayo that I had. I heated the beef very quickly in a hot skillet and that helped the blue cheese get soft and melty. Yummmm. Great sandwich and easy to put together quickly.

Heavenly Halibut

Wow, this was an incredibly good dish!!! Seriously, this was so delicious. I'd never had halibut before and was trying to branch out from our usual Tilapia and Salmon that we usually have. Holy cow, this was so delicious. I can't stop thinking about how good it is. And so easy too! I had steaks instead of fillets and cooked them at 375 for 15 minutes until they flaked easily. Then put the topping on and popped under the broiler for a few minutes. I loved the taste of the onions and the little bit of hot sauce. Perfect! There was plenty of topping for our 4 steaks. All of my kids (ages 5,3,1) gobbled it up and my husband did too.

Creamy Hot Cocoa

This is easy to whip up after coming in from sledding. Ingredients are on hand and it is sooooo delicious. Creamy and rich. I usually leave out the cream at the end and add water instead. It's still so rich.

Blue Cheese Waldorf Salad

Pretty good. I like the addition of bleu cheese. I'm not sure I liked the cayenne pepper. I might try leaving that out next time. A good side dish that whips together quickly.

Rempel Family Meatloaf

The best meatloaf I've ever made. I used saltines in place of Ritz crackers. Also, used 1 lb ground round and 1/2 pound of meat-replacement crumbles (made from soy). Was excellent, got rave reviews from the hubby.

Green Salad with Cranberry Vinaigrette

Wow! What a fantastic salad. This got rave reviews at a Christmas party. I added 1/4 splenda to sweeten the dressing as others suggested and it was delicious. I also added some mandarin oranges to the salad. So good!

Cranberry Sauce

Wow! This sauce tastes fantastic! You will not be disappointed. It has such a nice flavor. The sauce really needs to be boiled, though, rather than just heated on medium. Boiling it for the 10 minutes will cause all the berries to pop. It will foam up but that will go away as it cools. Just stir constantly while boiling. It's worth it!! Great idea to use the orange juice.

Authentic Mexican Tortillas

I used my kitchen aid mixer to mix up the dough which was quite tasty. And I used my pasta machine to roll it to an appropriate thickness. Then I cooked them on my electric skillet. The flavor is very good but they are not flexible at all so I think I may have overcooked.

Breaded Pork Tenderloin

Wow! Great pork medallions. I made a 2 1/2 lb tenderloin and still had tons of egg wash left over (maybe cut that in half) and had to double the breading ingredients. I added a few extra spices like garlic and onion powder and also some parmesan cheese. It got rave reviews. I only covered the pan for 1/2 the baking time. It cooked sooner than the recipe said so watch your meat thermometer. Very tender and delicious. This goes into my favorite recipe file.

Antipasto Salad with California Raisins

I know this was submitted by the raisin board, but I left out the raisins. I thought that was just too many flavors together. I also used white beans rather than kidney beans and crumbled goat cheese in place of feta. That being said... we loved the flavor of the sauce. It was exactly what I was in the mood for. Even my 2 year old ate it up.

Holiday Chicken Salad

This recipe is great and very versatile. I wanted a main dish salad rather than something on bread/lettuce, so I added some cooked orzo pasta (1 cup prior to cooking) and it was a perfect addition. This salad still tastes great 2 days later. I added halved grapes like some others suggested.

Mexican Bean Pie

This was great! Easy, fast and healthy too. I didn't have green or jalepeno pepper so I added about 1/4 tsp cayenne pepper for some heat. It was super yummy and even my 18 month old ate it up.
