One Bowl Chocolate Cake III

Simple and easy with ingredients commonly found in my pantry and refrigerator...and the result was a very moist and flavorful cake!

Whipped Cream Cream Cheese Frosting

I read the majority of the comments before i made them, some of which scared me, almost to the point of not trying it. However, with such high ratings, I figured it was successful for more people than it wasn't, so I went for it. A coworker had asked for a chocolate cake with chocolate frosting, and I wanted something light. I followed the instructions to a T, with the exception of adding 1/2 cup unsweetened cocoa with the sugar (I used granulated white), and the results were superb! I used my Kitchen-Aid stand-up mixer, and literally drizzled the chilled whipping cream into the bowl as it was mixing. It turned out to be the perfect consistency for frosting (not for decorating) - exactly as the poster said - and it wasn't too sweet. In a word, it was PERFECT! My niece, who hates frosting, tasted it and told me I could use it on all her cakes! I am still trying to find the perfect buttercream, but this is going to be my go-to frosting. Thanks for the recipe!!

Grandma's Chicken Noodle Soup

This is an excellent recipe that allows many modifications to taste, the main of which is the addition of more vegetables for me. I have seen many reviews stating that the amount of salt is excessive, but I would counter that one and a half tablespoons of salt is JUST RIGHT if you're using your own chicken stock and NOT canned. When I make my own chicken stock, I do not add salt; therefore, adding salt when making the soup is necessary for taste. Sure, some tastes would add more or less, but the recipe as written is not excessive. My guess is those who found it excessive were using canned broth that already contains salt.

Iced Pumpkin Cookies

I baked these for a bake sale at work, and they were a hit!! They were very easy to make and turned out perfect! The only thing I did differently from the instructions was that I did not drizzle the glaze. I dipped the tops of the cookies into the glaze, then placed them on a wire rack. I think it was faster and easier than drizzling, but that's just me. :-)

Awesome Red Pepper Hummus Dip

This is an excellent recipe! I used a couple of substitutions that I don't think affected the taste significantly one way or the other. I used lemon juice from a jar rather than juice from a fresh lemon, only because I didn't have one on hand. I also used one whole fresh roasted red pepper rather than the bottled red pepper. It was delicious!! My nieces used it to make veggie wraps, and I ate it with carrots and crackers. Perfect!

Peanut Butter Noodles

I made a couple of very minor substitutions - spaghetti instead of Udon noodles and chili sauce instead of chili paste - and it was fantastic. My entire family loved it!

Tres Leches Pina Colada Cake

I made this for a coworker's birthday and everyone loved it!! I thought it was great, but I will definitely substitute rum for the water next time. Easy, light, and delicious! I also used quite a bit more than one tablespoon on top of the cake, probably more like 1/4 cup.

Creamy Chicken and Wild Rice Soup

This is just delicious. Due to personal preference, I like to add onions, carrots, and celery, but it's a terrific recipe as is! Also, instead of heavy cream, I use skim milk and it doesn't alter the flavor at all.

Pumpkin Ginger Cupcakes

I thought these cupcakes were PERFECT! The crystallized ginger put them over the top, so anyone who skips that ingredient is cheating themselves. I made them for a cupcake contest and took second place, second to a doctored-up box mix cupcake! Silly judges!

Spinach and Strawberry Salad

This is delicious and simple. I hate when people rate the recipe based on a ton of modifications; however, I did decrease the sugar to 1/4 cup, which seemed just right to me. I can't imagine it with the full amount in the recipe. When I made it a second time, I further decreased the oil by half (calorie-counting) and used olive oil (a "healthy" oil on my Weight Watchers). I also used balsamic vinegar rather than white due to personal preference. In conclusion, I think the recipe is wonderful as it is (with half the sugar), but it's easy to make modifications and still come up with something terrific.

Freezer Caramel Drizzle Pie

Awesome! I use low fat cream cheese and low fat whipping cream. Next time I'll try low- or non-fat sweetened condensed milk. Also, another easy way to cut a few calories without cutting taste is to toast the coconut and pecans without the butter. I do mine in the toaster oven, and it's perfect! No need to use 6 T of butter!
