Sean's Falafel and Cucumber Sauce

Absolutely delicious! I love falafel but try not to eat fried food, so I baked it, and it turned out wonderful! The cucumber yogurt sauce is great too - I didn't have any dill, and I added a clove of garlic. I will be making this recipe for years to come. Thank you so much Sean!

Baked French Fries I

Delicious! I doubled the recipe, using 1 regular and 1 sweet potato, added 2 cloves of crushed garlic and 1/4 tsp cayenne pepper, cut into thin strips (like at a fast food place), tossed everything in a ziploc bag, and baked for about 20 min at 400 degrees. It immediately went into my permanent recipes. Thanks!

Tomato Barley Soup

Great healthy satisfying soup! I used 1/2 c barley, added 1 tsp basil, used all chicken broth, 1 small can tomato sauce, and 2 cans diced tomatoes (didn't have fresh), and it was delicious! I also cooked it 45 minutes with the lid off of the pot, and it thickened up nicely to a stew-like consistency. I will definitely be making this again :-)

5-Minute Guacamole

Very tasty! I added lemon juice (1/2 lemon), an extra spoon of salsa, salt, pepper, and mashed with a fork... delicious! And I usually don't care for guacamole!

Quinoa Side Dish

Slow Cooker Adobo Chicken

Delicious! I suggest removing the skin from the chicken before cooking. I removed the skin from half of the pieces, and left it on the other half, and every piece was equally moist and tender, and the skins were soggy and made the sauce a bit oilier than I would have liked. I also cooked it 3 hours on high in the crock pot. I asked the BF if he liked it enough for me to make again, and he replied, "I'd be mad if you didn't!"

Chickpea Curry

This was a pretty good recipe for chole/chana masala. Different than the kind in the restaurant, because it has much less fat, but still yummy! I didn't change much - added a can of diced tomatoes (for color and a little sweetness), and added 1/2 tps more of each spice to compensate for the additional volume of the tomatoes. I also added 1 tps of cinnamon and boiled the 2 cinnamon sticks whole. Fresh spices are a must! Will definitely make again.

Sweet Corn Cake

Great recipe! I changed a few things, as suggested by other reviewers, to substitute for ingredients I did not have and to make it a bit less decadent. I only used 1/4 cup butter, and regular white flour in place of the masa harina. I used a can of corn and roughly blended it with a hand blender. I made it with black bean soup, and there were no leftovers :-) Thanks for a new delicious side dish!

Dulce de Leche

This recipe is fantastic. Like other reviewers, I kept it on high for most of the time, stirring fairly continuously. The mixture will slowly thicken and darken, until it is about half of the original volume. The only problem I encountered was in the last 5 minutes or so, when little bits began to burn at the bottom, no matter how fast I stirred... (but they are just harder caramel, so still yummy!) I used vanilla extract, 2% milk, and the whole process took less than an hour. Enjoy!
