Fifteen Minute Chicken Chili

I'm rating four stars because that much cumin would overpower even with the specified amount of veggies. I like cumin but it can dominant a dish quickly. I used half of a can of beans (drained and rinsed) and half of a can of corn (drained.) I added back in water until desired consistency. I used 1 tb. or so of chili powder and 1 teas. cumin. This made a great chicken chili. I really liked the green chilies in this. Love having fast-to-fix meal ideas when needed. Oh and I sautéed a quarter of a chopped onion with the chicken.

Sally's Spinach Mashed Potatoes

You can reduce the fat out of this recipe and add more vegetables in if desired. I wouldn't cut down on the butter though. I used half the sour cream and cheese adding in other veggies and was a wonderful side dish and pretty. Family loved it.

Homemade Sweetened Condensed Milk

This is the recipe you need to make great condensed milk, but I agree you have to cook it quite awhile to get it to the proper consistency. Other recipes I've tried just hasn't produced the better results that evaporated milk and sugar will get you. Nice to have a back-up plan if you need a substitute.

Christmas Orange Hot Chocolate

I hope you try this if you like orange and chocolate together. The taste reminds me of those wonderful chocolate-orange balls sold at stores during Christmas time. This a real gourmet delight. The o.j. gives a perfect touch of orange flavor not too strong...just right. The cinnamon adds a bit of spice for a nice little finish. I made my own rich homemade hot chocolate instead of the package brand. Thanks Erica for sharing such a special treat.

Simple Garlic Shrimp

What can I say deeelish! This recipe and 'Basil Shrimp' on this site have so far been the most flavorful shrimp dishes I've tried. If you want more sauce easy to make more sauce. The only change I made was to add 1 tb. capers and made some pasta for a base.

Peanut Butter Lover's Peanut Butter Pudding

I can't review this recipe on the amount of cornstarch since I got a little heavy handed with that. I will review on the amount of peanut butter. First, I'm a peanut butter lover, but even making a sandwich I spread my peanut butter on the lighter side. So I will cut the amount by half and try that next time. I do realize that the name makes reference to peanut butter twice, still thought it heavy however. Other reviewers liked the amount so maybe you would too. I do think this would make a great peanut butter frozen pop.

Black Bottom Cupcakes II

I made 18 cupcakes with the batter (my perference) and cooked them for 20 minutes; they were moist and delicious. Made cute little treats for Halloween or anytime really. I also sprinkled with some almond slices before baking.

Lemon Pie Bars

I followed the first reviewer's suggestion and made more filling per crust. The cook-time was 10 minutes longer in my oven. Using fresh eggs, the deep colored yolks made a nice yellow filling. After cooling some, the bars were easy to cut cleanly and everyone absolutely loved them. I think they're better warm not completely cool, but that's just me. These are sure to please your lemon lovers.

Steamed Radishes

I would recommend slicing these- easier to handle (just cook until tender.) My favorite way to prepare cooked radishes is normally in "Hot Salad" but these are quite pretty when mixed with the different colored radishes. I used red and green ones as in my pic and small purple turnips. The turnips were just as tasty.

Very Chocolate Ice Cream

I hadn't really given much thought to making chocolate ice cream until I saw this recipe. I wondered whether the texture and flavor would live up to my expectations of what I like in a chocolate ice cream...smooth and chocolaty. Happily, my family was all surprised how good the outcome of this was- never having "homemade" chocolate ice cream before! I'm not sure why others had the freezing problems. I think perhaps their base or ice cream freezer wasn't cold enough.

Greek Couscous

The flavors in this are spot-on for Greek. Only I would cut down on the olive and garbanzo bean amounts. Also, I felt it needed small cherry tomatoes instead and some cubes of cucumbers to add some freshness. Otherwise, the dressing was simple and bright. I don't think it needs oil of any kind added either. I used some fresh "Israeli Greek Oregano" as well. A perfect accompaniment with a Greek meal.

Kung Pao Chicken

I wasn't sure whether to drain the water chestnuts or not. I really didn't want that liquid in my dish so I opted to drain and then loosen the sauce with another liquid. Anyway, we thoroughly enjoyed it and adding some cayenne strips (deseeded) was a real flavor booster too.

Easiest Pot Roast Ever

Loved the bouillon in this, but I agree to season the meat more and so I did with house seasoning. I also made a luscious gravy with the drippings. I was asked to make this again soon.

Chocolate Fudge Pops

I didn't add the sugar and used both "dark chocolate and white chocolate pudding" to make a swirled delight for the kids. I think homemade pudding would be better for these, but certainly not faster.

Chef John's Strawberry Ice Cream

This is quick, easy and good. I agree with Chef John that a simple base like this is the best for strawberry ice cream. If you want a pretty color this is the way to get it. But I think I will add part pureed berries next time and then some berry chunks after churning and before freezing. Steps 3 and 4 are a repeat basically and I omitted one of them. Also, I added some of the cream into the blender with my berries and sugar...because it wouldn't blend without it. I also cut up the berries before putting in blender.

Blackened Tuna Steaks with Mango Salsa

The spice blend needed to be tamed down on the cayenne for us (I only used 1 tsp. of it.) The mango salsa was good and made like many mango salsas. But if I make this again, I'd kick it up a notch with a different zestier dressing somehow. It'll take some experimenting to get there, but well worth it.
