Ethiopian Cabbage Dish

Almond Butter Cookies

GREAT recipe! I rolled the dough in granulated sugar before baking, and because I used my airbake pan, it took more like 11 minutes, but these were delicious! Crisp at the edges and chewy in the middle, I would repeat this again!

Overnight Coffee Cake

I didn't think this was dry - but i did (can't help it!!) make a couple yummy changes - I sliced fresh pears onto the top before adding my own streusel made up of butter crumbled with brown sugar, oats, a bit of flour, cinnamon, crushed pecans or walnuts, and nutmeg. I also use half whole wheat flour in place of one cup of the white flour - adds depth and a bit more nutritional value... yummy, yummy!!!

Easy Microwave Chocolate Cake

This wasn't "TO DIE FOR...", but it was a great substitute for "the real thing" in a pinch, just after the kids went down, before a movie with hubby. I used 1/2 cup BROWN sugar and 2 tablespoons Hershey's Dark cocoa... it was good! It did take close to 4 minutes in my full-size microwave - I cooked in a 4 qt size round corningware with the glass lid. Be careful not to use too much cooking spray if you go that route... way to go, to a pregnant craving mom! I never created anything this good under those circumstances! =)

Vanilla Ice Cream V

just one note to those who mentioned this froze "hard..." this is a hallmark of homemade ice creams. you will find that if you use a whipped-cream or custard recipe with lots of air or fat in it, it is less so... but that is a natural effect of less additives/processing. just set it out or microwave a couple of seconds to soften before serving. never store homemade ice cream for more than 2-3 days; it loses its great flavor and texture!

Apple Sausage Wagon Wheel

We LOVED this!! It will be a regular "after church on Sunday" lunch - it is quick and filling with a healthy kick. Do yourself a favor and melt some butter in your baking dish as your oven is preheating... then add your apples and sausage while still hot. Other than that, I think this is the first recipe I haven't been able to imagine addor subtracting ANYTHING!!!

Wrapped Mexican Eggs

This recipe is HUGE - so plan to feed a crowd or have LOTS of leftovers... which is not a problem, because this is GREAT! I give it a four only because the salsa was too watery and made the dish dry in spots and runny in others - I recommend leaving out half or all of the water and adding a tablespoon of oil for a thick, chunkier salsa. I also recommend doubling the salsa or at least saving some back to top the dish after cooking with another dab of sour cream. It was so nice to prep this the night before to serve Daddy in bed on Father's Day... add refried beans, fresh fruit, maybe some bunuelos (Mexican fried donut-things) and a PINA COLADA!!

Sesame Tilapia

How simple, and absolutely yummy! I would never have thought of the sesame oil with the Italian spices - but it so works. My kids cleaned their plates, and even husband was vocally complimentary! Thanks for a great recipe!

Simply Divine Meat Loaf with Spinach

MMMMMMMMMM, MMMMMMMMM, MMMMMMM! We LOVED this dish - especially good with Sweet Corn and Spinach Mashed Potatoes. Enjoyed the leftovers for lunch THE NEXT DAY, which we never do. This is going in the monthly rotation, for sure. Thanks for sharing!

Cobb Salad

Grandma Johnson's Scones

This was DELICIOUS!!! A few changes I made: used plain, unsweetened yogurt instead of sour cream. Also made a glaze with cinnamon, powdered sugar, and fresh orange juice... this was GREAT with the raisins! Finally, I recommend STRONGLY that you use a Kitchen Aid to mix this... it was a HUGE mess by hand... just use your dough hook and mix briefly before kneading. But oh, so worth it!!

this was a little too runny, so i'm giving it a "4." i am going to try freezing bananas next time, and possibly substitute frozen strawberries for the jam. i'll report back next try... it was a good enough concept to "tweak!" and repeat.

try substituting 1/2 cup molasses for that much sugar, also 1 cup brown sugar instead of that much white. this makes a GREAT cookie even better! yay!!!

Meal in a Muffin Pan

Four stars only because it took a bit longer to cook and the eggs somewhat overflowed... also the muffins stick if you don't grease really well. Otherwise, this was a decadent, so-bad-for-you-but-so-yummy-to-eat meal! I am pregnant and this is a new CRAVING - I've made it for breakfast for my four homeschoolers twice this week! Super easy... let the kids help pat the hash into a "shell." One recommendation: Put a tiny pat of butter in the bottom of each greased muffin cup where you put the corn muffin batter - it gives the muffins a browned, old-fashioned flavor. Also sprinkle the batter with cheese before baking or drizzle plain muffins with honey to serve. It's a fabulous contrast with the salty hash and eggs!

Apple Hermits

We made these, my preschooler and I, for "apple week." Yum, yum, super yum. Couple changes: I used half raisins, half craisins, pecans instead of walnuts, and made an apple juice glaze (although to be honest, they were perfect without it!) Thanks for sharing a killer fall cookie recipe!
