Chicken with Green Peppers in Black Bean Sauce
Fantastic!!!! I didn't add the salt, used chicken soup base instead of the bouillon, and used green and orange peppers. I used low-sodium soy sauce, instead of regular, to cut the saltiness. My husband doesn't like cilantro, so I cut the amount in half....still tasted great! I served it with brown rice. I will make this again.... so good!

Remoulade Sauce a la New Orleans
Love it! Make sure you use Sriracha hot sauce for a wonderful kick. I added chopped sweet onion, since I didn't have scallions, left out the green olives, and added a little chopped green pepper. Used regular yellow mustard, since I didn't have Creole mustard, with a bit of Creole seasoning. Was great on crab cakes!

Creamy Au Gratin Potatoes
My family ate all of it and enjoyed it, but even though I greased the baking dish, it burned around the outside and stuck to the dish. If I make it again, I will add more sauce and check on it more often, maybe not cooking it as long, or lowering the temperature of the oven.
