Red Velvet Cupcakes

I made this recipes exactly as stated and the cupcakes came out dry. They still have a nice flavor, but I was bummed that they weren't as moist as I'm used to in a cupcake. I will possibly modify the recipe by using less flour and/or using buttermilk in place of some of the sour cream and milk, but I think there are better recipes out there that don't require a whole bottle of red food dye.

Fudge

By far one of the best fudge recipes that I have tried! I didn't use the walnuts, and doubled the recipe and put into a 13x9 dish, then I pressed mini marshmallows into half of the pan. So yummy! I would suggest that if you use mini marshmallows like I did to mix them into the fudge before pressing into the pan. Some of them were just falling off, but the ones that I really smushed in were absolutely lovely! Thanks for a great recipe!

Easiest Peanut Butter Fudge

I made this for Christmas and forgot to review it until now. The taste was very yummy, however the texture was crumbly. I let it set in the fridge and then tried cutting it, but it was crumbling rather than cutting. So I then let it sit out for a few minutes and tried cutting again. Much better! If you store this in the fridge, it will be crumbly if eaten right away. I suggest taking it out of the fridge for a few minutes before serving. It makes it 100x better! Thanks for the great recipe!

The Best Chicken Enchiladas

I did not follow the recipe to a "T" but with my changes it was amazing! I first cooked up a small onion and a bell pepper in some olive oil, then added a packet of taco seasoning. I then added a little water to make a sauce and then sprinkled in about 1/2 cup of uncooked instant rice and covered the pan with a lid until the rice was almost cooked. I stirred in some sour cream and cheese then rolled the filling into 5 tortillas, put them into a 13x9 and covered it with a can of enchilada sauce and lots of cheese. I then cooked it at 350 for 35 minutes and it was to die for! I will definitely be making it again and maybe next time I'll add some corn.

Parmesan Knots

These are amazing! I scaled down the servings to twelve, and used melted butter instead of the oil for more flavor. I also used 2 cans of refrigerated breadsticks instead of the biscuits because I like their texture and fluffiness better. I then stretched them out and twirled two sticks together to make a pretty knot. After baking them, I spread on the mixture with a pastry brush and topped off with a light dusting of additional parmesan cheese. Amazing flavor! These are now my go to breadsticks for all of my Italian dishes. Thanks!

Eggplant Parmesan II

I decided to make this when my brother and my vegetarian sister-in-law came to visit with their new baby a few weeks ago. I followed other reviewer's advice and salted the eggplant after i had peeled and sliced them. I used 4 small eggplant because that's what the store had, and i baked them for longer than instructed, about 10 minutes per side to get them nice and crispy. After layering with cheese and suace, i baked until it turned into a wonderful aroma filled the house. It tasted great, and the texture was phenominal! Thanks for this amazing recipe Doery!

Alfredo Sauce

Amazing sauce!! I made exactly as written, except I added a dash more cream because not all of the cheese was melting and it was getting a little thick, and I didn't add parsley, just a personal preference; who would want to ruin a perfectly great white sauce with specks of green? Not my taste, but anyways thanks so much!! I have no need for any other alfredo, this is the best!

Banana Banana Bread

This is a very good recipe, I had 5 frozen bananas so I defrosted them and they mashed up nicely. I also added 1/2 a bag of chocolate chips and it turned out great! Thanks for a great recipe, I will be making this again!

Southern Moon Pies

These are awesome! In Pennsylvania, near Amish country, we call these "whoopie pies" and boy are they yummy! They remind me of the whoopie pies my Pennsylvania Dutch Nana used to make for us, thanks alot!

Roast Sticky Chicken-Rotisserie Style

This was really yummy! But next time I make this I will make sure to use just split chicken breasts since I always forget that my bf hates the drumsticks. The seasoning on this was fabulous though! I left out the white pepper and cayenne pepper because I don't have them and it was still yummy! Thanks for the great meal!

World's Best Lasagna

This was very yummy, I made it on Valentine's and my boyfriend loved it! I omitted the 2 cans of tomato sauce since it seemed moist enough, I also omitted the sugar and used 2 lbs of ground beef instead of a mixture of the two. And I didn't feel that the sauce needed to cook for so long since this is close to the 10 minute homemade sauce that I use for all of my Italian dishes. Oh and also, I made this the day before, and it sat in the fridge until I popped it in the oven. Next time that I make this I think I'll use shredded mozzarella because when we bit into it all we could taste was a big hunk of cheese. Thanks so much for this recipe John!!

Irish Chicken and Dumplings

This was good, not excellent though. I listened to other reviewers and didn't add the chicken broth, BAD idea! The bottom of the pot burned and there was not enough liquid. Next time I will cut te chicken before cooking it and I will add less potatoes. Thanks!

Chicken Enchilada Casserole I

The sauce for this is fantastic!! But this came out runny, and I had even omitted the chicken broth, drained off the tomatoes, and ripped up the tortillas. But luckily I had flour tortillas on hand as well, so for each bowl I ripped up a large flour tortilla and then topped it with the chicken mixture. It turned out amazing! The flour tortilla soaked up the sauce and made this one of my favorites from this website, thanks, Kyle!

Quick Gnocchi

I tried this but it came out just awful, maybe I was doing something wrong like adding not enough or too much flour but it was just a mess. I ended up making some frozen ravioli i had instead. I may try this again when i have some extra time. Thanks though.

Easy Beef Stroganoff

I didn't really follow the recipe but I took another reviwers advice instead and cooked an onion in canola oil, then browned 1 lb. of extra lean ground beef, added one can of consomme soup, then 1 cup of sour cream and 4 tbsp. of flour to the mixture and simmered until thick. I served this over egg noodles, and it was very yummy! thanks for the idea!

Best Ever Chocolate Fudge Layer Cake

I have made this several times and have even made different flavors. The last time I made it I used yellow cake mix and vanilla pudding, and used my own icing and it was amazing! I never use the glaze that they suggest but instead make a homemade icing. I also don't use the chopped up chocolate, I feel that it takes away from the amazing moistness of the cake. No one ever knows that it's a boxed cake mix!

Cream Cheese Frosting II

This is the BEST cream cheese icing I have ever tasted. I thought it tasted just like the cheese filling you sometimes get in danishes or in other pastries. I did only add 1 1/2 cups of confectioners sugar because of some of the reviews I read. Thanks so much for the post!

Garlic Chicken

The Best Mashed Potatoes

These didn't work well at all. Too much garlic flavor and the texture was off. The potatoes became all grainy from the parmesan and they weren't creamy enough. I tried adding milk to thin them out but nothing helped. Thanks for the post though!
