West African Peanut Stew
There's only one word to describe this soup, OUTSTANDING. I fought temptation, and followed the recipe precisely. Pure perfection. Because my family devoured it so quickly, I will double the ingredients when I prepare it tomorrow (it beckons to be shared with friends)! To spice it up, I will increase the red pepper and add additional crushed peanuts and kale instead of collards (only because I always have kale in the frig). I have a gathering planned for later this month, I will eliminate the chicken and use vegetable stock for my vegan friends --they will be pleased. This soup is so versatile. Thanks, KM1312!

Brown Butter Cookies
I left the kitchen to write his review: This cookie is AMAZING. The rich brown butter flavor is prominent in the cookie and enhanced by the icing. I baked a batch w/o icing and one w/icing. Had never browned butter before, and was unsure when to stop the process. I started over when I realized there were burned particles on the bottom of the skillet. The 2nd time was a charm (check out Youtube video)! For the icing, I used less than 3c confectioners sugar, and less water too. Even if I had frosted all the cookies, I made more icing than needed. Thanks for another great recipe.

Chef John's Macaroni and Cheese
Despite my skepticism about adding nutmeg and thyme, this recipes tops the mac and cheese that I was raised on (don't tell Mom)--one of my top favs from her kitchen! Creamy, cheesy, rich, but not too rich, with a crust topping that takes it right over the edge. I followed the recipe EXACTLY, but turned on the broiler at 20 minutes to quicken the browning. Absolutely incredible. I won't be missing the gym this week, or next.
