Great Recipe. Increased the seasonings to suit our taste. Also, changed 2lbs ground beef to 1:1 pork and beef and added 1 24 oz can whole tomatoes which i crushed before adding them.

Chicken Tortilla Soup I

Reviewed: Dec. 15, 2005
This was delicious. I grilled a whole beer can jerk chicken the night before. I removed the bones and skin from the breasts and thighs and used that as my chicken for the soup. I then boiled the leftover bones and any skin in about 6 cups of water and let it simmer. I then used about 2.5 cups of the seasoned water for my broth. The grilled jerk chicken flavored water gave it awesome flavor. I did not have any canned tomatoes so I used a jar of hot salsa. No hominy but doubled the corn, added some lime juice. I am sure that this recipe was good before but these changes made it awesome along with the accompanyments mentioned in the recipe.

We did everything by the recipe and it turned out really good. We added cornstarch to thicken up the sauce, and next time we will probably skip that step.

This is a really good recipe. The only thing I would change is to add extra lemon juice, other than that, everything was great.

One of our favorites! We doubled the marinade and added extra lime juice, but other than that, everything else we kept the same as the recipe.

Taco Soup I

This is a great recipe. We added a can of black beans and some cilantro for extra flavor. Both additions really made the recipe even better. We didn't use all of the water the recipe called form we added about 3/4 of a cup.

Chicken Piccata I

Reviewed: Nov. 23, 2004
We really liked this recipe. The original recipe needed some modifications, so we added about a cup of chicken broth and doubled the wine and lemon juice for extra sauce for pasta. We also used fresh garlic instead of garlic powder. The sauce was excellent with pasta, but next time we will add some extra lemon juice.

very tasty marinade. I added more garlic, less salt and pepper. I also added some fresh cilantro to the marinade. After cooking the steak added some beans and rice to the fajitas which made them the best.

Sweet and Spicy Stir Fry with Chicken and Broccoli

Reviewed: Oct. 31, 2004
very good recipe. made a couple of changes. used pork instead of chicken and white wine instead chicken broth becuase those are what we had. also i marinated the pork in soy, wine, garli, ginger, and chili sauce. i think it helped make the meat very tender and flavorful. also i doubled the sauce ingredients and i wouldn't use the salt and pepper becuase i think the other ingredients cover that aspect of the recipe. great recipe with veggies served over rice

Angel Hair Pasta with Shrimp and Basil

Reviewed: Oct. 30, 2004
This was a really good recipe, the sauce was especially good. We marinaded the shrimp first in olive oil, oregano, garlic, and red pepper. This provided a greater flavor in the shrimp. We also used a can of tomato paste in the sauce.

We really enjoyed this recipe. We wanted to have extra sauce for pasta, so we tripled the sauce. We used chili sauce and red pepper instead of the chili paste. We also doubled the marinade. Excellent!

Spicy Pork Stir-Fry

Reviewed: Oct. 15, 2004
This was wonderful! We made a few changes to the original recipe by skipping the cornstarch, tripling the sauce because we added pasta to the stir fry ,and adding some lemon juice at the end. We used chili paste instead of chili oil, and red pepper instead of the chilis, and we used olive oil instead of peanut oil.

This was a pretty good recipe. The ginger, honey, and lemon juice provide a good flavor. I added extra honey and a little extra lemon juice while the carrots were cooking.
