Downeast Maine Pumpkin Bread

Untweaked recipe gets 5 stars, and healthy version gets 5 stars too! Healthy version: (1)100% whole white wheat (it is not as heavy as regular whole wheat), (2)substituted half the oil with applesauce, (3) 1 C brown sugar and 1/2 C white sugar, (4) used apple juice instead of water, (5) doubled the ginger, (6) and added 3 Tbsp flax seed. It was so good, the two of us finished the bread (half recipe) in 24 hours. My husband immediately requested that I make more. (Cal. 184.6, Fat 6.7g, Carb. 29.2g, Fiber 2.8g, Sugars 14.8g, Protein 3.8g)***Recently made this again. Goes great spread with sweetened cream cheese.

Sesame Pasta Chicken Salad

The first time I made this, I followed the directions exactly and thought it was pretty plain. I wasn't going to ever make it again, but I had to make dinner on the fly and thought I would give this another chance, with modifications. This recipe is definitely not 5 stars on its own. Many reviewers added veggies because it just falls flat when made as is. I added shredded carrots, chopped green onions, sweet peas, and crushed roasted peanuts. I also seasoned the chicken with onion powder, garlic powder, salt, and fresh ground peppercorn melange before cooking, and I added garlic powder and red pepper flakes to the sauce. More seasonings and vegetables make this much more pleasing to the palate.

Roquefort Pear Salad

This salad is amazing. I took this to a birthday party, and people kept going back for more. The dressing is delicious and goes perfectly with the salad. I couldn't find roquefort so I used gorgonzola instead, and substituted walnuts for the pecans (to sneak in some omega-3s).

Coconut Cream Cake I

I made this for a birthday. Even people who weren't crazy about coconut loved it. Since the cake mix and the coconut cream already had plenty of sugar, I omitted the sweetened condensed milk. The cake was perfect without the milk. Made it with the cool whipped frosting recipe from this site.

Gourmet Mushroom Risotto

Cut out the white mushrooms and used only baby portabellas. There were still plenty of mushrooms. Used fresh grated parmesan cheese and served with rotisserie-style roast chicken and carmelized onions. Very delicious! Best served immediately because the risotto will soak up too liquid and will have the wrong consistency if you let it sit too long.

Creme Anglaise II

Good, but a bit too sweet. I wish I read the previous reviews and cut down on the sugar. Rather than buying half and half I decided to use up the little bit heavy whipping cream I had left over and mixed in some lowfat milk at the very end to thin it out.

Roast Sticky Chicken-Rotisserie Style

I was wondering if the spices would make the chicken spicy hot rather than rotisserie style. I was pleasantly surprised how the flavors all blended to make it taste store-bought! I made this for a fancy dinner and liked the fact that I had plenty of time to work on other dishes while this roasted.

Used real whipped cream, caramel sauce, and heath bar chunks. This is SO good! Even better 2 days later after the brownie has had a chance to absorb more caramel and cream.

Chicken Tikka Masala

Don't be intimidated by the long list of ingredients. It was really simple to make, and I had most of the ingredients on hand. After tasting this, my husband declared we didn't need to go out to an Indian restaurant when we could eat good Indian food at home. I did substitute half of the cream for evaporated nonfat milk to make it healthier. I'm so thankful for the previous reviews, which were right on the ball with the salt. I added none, and it was plenty seasoned from the tomato sauce. It was fabulous with garlic naan and grilled zucchini with curry spices.

Homemade Italian Turkey Sausage

This is a great starting point. I initially followed the recipe, but my husband didn't care for the fennel seeds, and I wanted bolder flavors. When I make this, I add additional garlic powder & oregano, plus onion powder, paprika, fresh ground pepper melange (mixture of black, green & red), sea salt, and some red pepper flakes. I can't say exactly how much seasonings I add because I just shake them in, but the result is a bolder, spicier sausage taste. To save time, I often season the turkey while I'm cooking it rather than marinating it first. I use my modified version in a lot of recipes. I dislike pork, so I'm very thankful to have a healthier alternative.

Hawaiian Chicken Kabobs

Excellent recipe. Used fresh ginger and garlic but otherwise didn't change a thing. I made an extra batch of the sauce, thickened it with some cornstarch & water mixture over the stove for basting and dipping. I would also try this with steak.
