Bacon Ranch Pasta Salad

This is really good! I was looking for something to be able to pack for lunches during the week. Instead of bacon I used turkey sausages. I also halved some cherry tomatoes and threw them in there, and I omitted the olives because I don't care for olives. I also have no idea what garlic pepper is, so I just put a couple turns of freshly ground black pepper along with the garlic powder. Oh, and 3/4 cup mayo was just right - remember, you can always add more but you can't subtract! YUMMY

Sweet Pepper Pasta Toss with Kale

Pretty good dish, although a bit bland. I used almost the entire bunch of kale (it really reduced down to almost nothing in the skillet), while cooking the veggies I added some chicken stock. I used feta seasoned with mediterranean herbs. I think it could have used some halved cherry tomatoes thrown in as the kale is almost cooked.

Make Ahead Breakfast Casserole

YUM. Easy to throw together. I left out the mushrooms since I had picky eaters. I bought large flour tortillas and served breakfast wraps. I also made some wraps and froze them - great for weekday breakfasts!

Downeast Maine Pumpkin Bread

YUM. I made 12 muffins and an 8x8 pan. Muffins came out at 30 mins (probably could have taken them out at 27 minutes). As far as the 8x8 dish, I just checked for doneness but it was only maybe 10 more minutes.

Asian Orange Chicken

Too sweet. I cut the sugar down to 1/3 cup for the whole recipe, but other than that, I like the taste of it, plus I add extra red pepper flakes (like it spicy). Very yummy over white rice. Oh, and I also cut down on the cornstarch mixture. 3 Tbl just seems a bit unnecessary.

Cubed the chicken before cooking...I don't think this makes enough sauce for 4 servings...I would serve 3 with the recipe. Overall, good. I will make it again.

I didn't have steak sauce so I used 1 Tbl Worcestershire instead...very moist, tasted great. Served it with broccoli and roasted potatoes on the side.

Brownie Caramel Cheesecake

cooked the brownie layer as stated, but it became really hard...i could see just using caramel topped in a squeeze-bottle rather than going through the trouble of baby-sitting melting caramels...overall, not a great cheesecake.

Suki's Spinach and Feta Pasta

This was easy to make. I use extra spinach and sometimes add hot italian turkey sausages. I also add extra garlic. I make this once a week, love all the fresh veggies.

Chocolate Chip Oatmeal Muffins

I followed the recipe except I only had 1/2 cup applesauce on hand, so I used 1/4 cup of canola oil for the rest. I greased muffin tins and these came out very moist and delicious out of the oven. They stayed moist the next couple days too, and were good with coffee.

Apple Bundt Cake

I substituted half the white sugar with brown sugar, and I replaced 1/2 c. of the oil with applesauce. This cake was too dense and had an unusual taste to it...people at work like it, but it's not one I will be making again, sorry.

Cheese and Bacon Potato Rounds

Used hormel (I think that was the brand) real bacon peices, much easier plus I hate frying bacon...spooned a dallop of sour cream on each potato round before baking the second time. It was a hit at the office picnic!

Chocolate Cavity Maker Cake

Everybody loves this cake - they says its "to-die-for" and I get multiple requests for it. I replaced the coffee liquor with chocolate milk. Baked for exactly 1 hour and it turned out delicious and moist. Thanks!

I wish there was a 4.5 rating....This was pretty good. I really liked the basting mix, but I was thinking maybe to inject the chicken too next time?? Will try it out and report back to you. :)
